Hello! I never learned to cook when I was growing up. Now, I live in an apartment with a roommate and it's not fair to expect him to cook all the time. Can anyone give me some good recipes? We are on a budget and won't eat anything vegitarian. Thank you!

Okay,people.....microwaving a frozen dinner isn't "cooking" and neither is making Ramen.

I too did not learn to cook when growing up. I decided I needed to cook for my family when I decided to be a stay-at-home mom 4.5 years ago. This is the easiest, and best tasting dish I have.

Preheat your broiler (if electric broiler set it to 425 - 450 F). Get 1 lb. of salmon fillet with skin. Cut fillets into pieces about 2 inches wide. Put aluminum foil on top of shallow sheet pan, spray with cooking spray and put cut fillets on top of the foil.

Spread 1 or 2 tablespoons of extra virgin olive oil on top of all fillets (the less the better), covering top and all cut sides. Season with Kosher salt and freshly ground pepper to taste. Put in oven about 6 inches from the broiler element. (WARNING - if your oven is gas the flame may cause a fire with the olive oil, so be careful of that. If it happens just turn gas broiler off. If you catch it quickly it should be okay, but use your judgment).

Put in oven for between 6 to 8 minutes. All ovens are different, some run very hot, others cold, so you will need to check on the fish. It will be done when the edges start to brown (a little over brown is okay) and the fish sections flake with a fork. When done, put on top of the stove and place aluminum foil on top to keep warm until ready to serve.

The fish goes well with polenta (try Emeril's cheese polenta recipe from foodnetwork.com website). Its easy, fast, and good. I use cornmeal, not "polenta" for the recipe and find that it cooks in 5 minutes. Do whisk as the recipe says.

I wait for salmon to go on sale at the store (above every 2 weeks or so) and this meal is cheap, like $8 for dinner for 2, and there are leftovers. Good luck. E-mail with any questions.

Football Season Hot Pockets

2 Tubes of Crescent Rolls
1 lb. of ground beef
1 med. onion, chopped small
4 scallions, sliced thin
1/2 C sliced black olives
2 diced plum tomatoes
2 Cans mild green chile peppers, whole
Sour Cream
1 pkg. shredded cheddar or jack
chili seasoning
cayenne pepper
salt & pepper

Preheat oven to 375 deg.
Brown the ground beef, onion, & add salt & pepper, cayenne pepper & chili seasoning (all to taste). Set aside.
Open crescent tube. DON'T divide rolls into triangles, keep them together in pairs, so you should have rectangles.
On half of the rectangles, place 1 green chile, then add a couple spoonfuls of the ground beef mixture. Sprinkle a little shredded cheese, then place the other rectangle on top; pinch edges together to seal. Do this for all.
Bake for about 15 min., or until golden brown. Remove.

Place on serving dish. Sprinkle w/ rest of cheese, scallions, olives & tomatoes. Place a few good size dollops of sour cream on dish, and keep the rest out for everyone to add their own. Festive, yummy and easy. Enjoy!!

Try beef stew. Stew meat are usually inexpensive so try that. I'm sorry I don't know the exact amount but here is what I do: I roll the beef pieces(abt. 1/2lb.-1lb.) in seasoned flour(salt and pepper). Then I brown them in a frying pan. After that I put them in a large casserole then I add the following ingredient: peeled potatoes(sliced if they're big) sliced carrots, onoins, bay leaf, salt and pepper to taste and enough water or beef stock to cover. Sometimes I add wine. You can add mushroom too. Then I simmer it for hours till they are tender. About 2-3hrs. or more, just checkfor tenderness. At this time you can add frozen or fresh peas then simmer for abt. 5-10min more. Serve with crusty bread.

Terriaki Beef and Noodle Bowl

1/2 lb of sirloin steak, cut up in small 1/2 inch cubes
1 pkg. frozen baby terriaki vegetables
1 1/2 cup of water
1 (3oz.) pkg of oriental-flavored ramen noodle soup mix

Brown steak in skillet on medium heat. Drain. Stir in frozen vegetables and water. Bring to a boil. Break noodles into 4 pieces and add to mixture. Add 1tsp of flavor pouch. Reduce heat to medium low and simmer until noodles are tender. About 5 minutes.

What I like about this, is it's so cheap and good tasting.

Crock pot-easy and simple-get a roast any type-put roast in crock pot-add 3 beef boullion cubes-add in carrots-potatoes and onion and about 4 cups of water. Start crock pot in morning and let it cook all day until you are ready to eat. With left overs you can make a soup out of it as well. Good luck!

I find using timers and pay attention to the food cooking so it won't burn help me.

Buy frozen prepared foods and every night pop one in the microwave oven. That`s what i do easy and delicious.
