Salami
"Here's a great salami recipe. You can add spices to make pepperoni too."
Original recipe yield: 2 pounds


INGREDIENTS
2 pounds ground chicken or turkey
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon minced garlic
1/2 teaspoon ground mustard seed
3 tablespoons curing salt
DIRECTIONS
In a large bowl, mix together the ground meat, black pepper, garlic, mustard seed and curing salt until well blended. Divide into 2 or 4 rolls, wrap in aluminum foil, and refrigerate for 24 hours.
Bring a large pot of water to a boil. Place the wrapped rolls in the water, and simmer for 1 hour over medium to low heat. Remove carefully, and poke holes in the foil to drain. Set aside to cool. Remove foil, and rewrap with new aluminum foil. Refrigerate until fully chilled, about 3 hours. Slice, and use for sandwiches, crackers, salads or just snacking.

Yes.

There are lots of recipes for salami all you need to do is substitute chicken for the other kind of meat.

Go to library/Internet look up cooking book, pick the recipe of your choice for beef/deer/Buffalo(but you will use chicken and leave out the beef..), improvise if you like.

You may also need to substitute the tube with artificial tube of some kind as(I think they are available, as lot of people at home make salami and they do not have guts to use), chicken guts are very Small and may cause some hygienic problem as you may not me able to clean it completely.

Try Small batch of few recipes.
