Try poached salmon with hollandaise sauce, its my fave meal.

You didn't say if it was a steak or fillet, but I prefer the steaks as they are a uniform thickness. I put a little oil onto a plate and after patting the salmon dry with paper towels place the salmon on the saucer and rub around, both sides and place on a rack under the grill, about 6" from the grill. Lightly salt first and after 3 minutes carefully turn, carefully turn and cook for a further 2 minutes and let rest covered. Drizzle with a little vinegar or lemon, but I prefer straight out of the pan. Salmon is the King of fish when cooked properly, otherwise, it is just fish and you can add what you like. Try to get Ocean or Fresh River Salmon than the farm bred.

Tasty Baked Salmon Dijon

INGREDIENTS:
1 C fat free sour cream
2 tsp dried dill
3 Tbsp scallions, finely chopped
2 Tbsp Dijon mustard
2 Tbsp lemon juice
1 ½ lb salmon filet with skin, cut in center
½ tsp garlic powder
½ tsp black pepper
fat free cooking spray, as needed

PREPARATION:
1. Whisk sour cream, dill, scallions, lemon juice, and Dijon mustard together in large bowl until well blended.

2. Preheat oven to 400º F; while waiting, spray baking sheet with nonstick fat free cooking spray.

3. Place salmon, skin side down on baking sheet.

4. Sprinkle with garlic powder and pepper, then spread with sauce made in Step 1.

5. Bake salmon until opaque in center, or about 20 minutes.

For best results, do not over bake.

Tip: Steamed broccoli is always a perfect compliment to salmon!

Take a square of foil, and grease lightly.
Put salmon in centre, add salt, pepper, lemon, splash of white wine and some dill.
bring up the sides of the foil to make a loose but sealed parcel and pop into a hot oven for 10-15 mins..yum

I have a recipe for baked salmon w/ fresh spinach. Just buy the bagged spinach at the grocery store, & you will need fresh garlic, olive oil, soy sauce, white wine, & fresh ginger. Layer a casserole dish with spinach, then put salmon on top. Pour olive oil, soy sauce, & white wine over the spinach, then crush garlic & put that on each piece of salmon. Add fresh ginger to each piece of salmon also. Finally you just add another layer of spinach over the salmon & bake it at about 325 for 20 minutes or so. The spinach wilts & cook down quite a bit so you can add more or less to suit your tastes.

place salmon on sheet of foil. Put a knob of butter on the top and add 1 clove of crushed garlic. wrap salmon in the foil and cook in the oven for approximately 20 minutes and loosen the foil. If the salmon is a nice pink colour and falling apart to the touch then it is ready. add a touch of parsley and serve with mashed potatoes and green beans.

I cook salmon wrapped in tin foil with a little white wine, a squirt of lemon juice, a few sliced onions and a sprinkling of freshly ground black pepper. It's delicious!

Take 2 fillets per person, leave the skin on,
Smother the flesh sides with pesto
( I use basil pesto but you can buy all sorts of different pestos now)
Place a couple of leaves of fresh spinach on top then sandwich the 2 fillets together.

Loosely encase in foil and pop in the oven. x Mmmm yummy.

I serve mine with baby new potatos and asparagus. Have fun. x x x

In a foil parcel with butter, olive oil salt and pepper and whatever herbs/spices you fancy. it's nice with soy and ginger for instance, or white wine and tarragon. Oven 180/200 degrees C, 10-12 minutes.

Grilled salmon is hard to beat, but you could try steaming it in a basket with strips of lime zest and grated ginger. Yum!

Add some prawns wrap it in foil (loosley) and bake it in an oven gas mark 5 for about 15/20 mins.
