Probably not, because is not by blood, Italians can get visa or became sitizens when ancestros were Italians.

To my knowledge Italy doesn't have an ancestry visa. If your mother has Italian citizenship or can obtain Italian citizenship then you may be able to apply for citizenship and a passport that way but you cannot "skip" a generation.

I am with the understanding that Italy will permit you to stay there if you can prove an adequate income or if you can show that you can hire Italian citizens.

Don't ask us. What do we know?
Call an Italian Consulate!
