One of the tastiest and all time favorites with my family is good old fashioned British "mince and mash" Guaranteed to get rave reviews from anyone that eats it.
One to two pounds of ground beef (lean)
3 to 4 good sized onions, finely chopped
4 or 5 good sized carrots, sliced into circles
one small can of sweet baby peas
one packet of Knorr oxtail soup (it maybe renamed beef and tomato soup now in some places)
two beef boullion cubes or more if desired.
Six to eight good sized potatoes
salt and pepper
First brown the ground beef in a deep saucepan. Once browned drain the fat from the meat. Toss the chopped onions in with the meat and cook til they turn transparent. Add the carrots and enough cold water to well cover the meat and veggies. Add salt and pepper to taste.
Now add your Knorr oxtail soup to the mixture and stirring continually til it comes to a boil. If you don't stir it will get lumpy. Once it has come to a boil turn it down and simmer for at least an hour, checking that is not sticking on the bottom. You can adjust the water while cooking if it seems too thick, just add a very little at a time as you don't want it too loose. During the simmering time add your boullion cubes, to your liking. Stir frequently. About ten minutes before serving add the can of sweet baby peas.
In the meantime peel and boil your potatoes til well cooked. Drain and return to the pan and take an electric mixer on high speed and mash your potatoes. Add a lot of butter and some milk til desired consistency and whip til there are no lumps and they are fluffy. Season with salt and pepper.
Serve by putting a mound of whipped potatoes in the middle of the plate and pour the meat vegatable mixture over it. Serve crusty bread with butter on the side.
Very simple and very delicious. An all time British family favorite.

MACARONI MAGIC
INGREDIENTS
¾ cup uncooked macaroni
500g minced meat
1 or 2 cloves garlic
1 medium onion, chopped
1 tin tomatoes (425g)
¼ cup tomato sauce
½ teaspoon chili sauce or few drops of tabasco
½ - 1 cup of water
pinch of herbs
1 teaspoon curry powder
150g grated cheese
2 tablespoon melted margarine
METHOD
brown mince and drain fat
add garlic, onion, and curry powder
stir for a few minutes
add tomatoes, sauces, herbs
stir in enough of the water to get a reasonably wet consistancy
stir while bringing to a boil
add a sprinkling of the cheese
heat slowly ‘til it melts
add uncooked macaroni
spray or baste casserole dish with cooking oil
place mixture into casserole dish and level it
sprinkle remainder of cheese over the top
cook at 180°C for 30 minutes
serve with lotsa veggies and crusty bread!

the old faithful enchilada... here's my favorite!!
Beef Enchilada Casserole Recipe
1 pound lean ground beef
1 to 3 teaspoons finely chopped jalapeno pepper
1 1/3 cup chopped onion, divided
1 tablespoon vegetable oil
1 can (8 ounces) tomato juice
1 can (14.5 ounces) diced tomatoes, undrained
1 can (10 ounces) chopped tomatoes with green chiles, undrained
1/2 teaspoon sugar
1/8 teaspoon salt
dash pepper
1 1/2 teaspoons all-purpose flour
1 tablespoon water
4 cups (16 ounces) shredded cheese - mixture of mild Cheddar and Monterey Jack or Mexican blend
1 dozen 6-inch corn tortillas
Cook ground beef in a large skillet until no longer pink, stirring to crumble. Drain and set aside. Sauté jalapeno pepper and 1/3 cup of the chopped onion in hot oil until tender. Add tomato sauce and next 5 ingredients; stir well. Bring to a boil; reduce heat and simmer for 15 minutes, stirring a few times.
Combine flour with water; stir into the tomato mixture. Cook over medium heat, stirring constantly, for about 1 minute, or until thickened.
Combine 3 cups of the shredded cheese with remaining onion; set aside remaining 1 cup of cheese for topping.
Using tongs, dip a tortilla into the hot tomato mixture; sprinkle about 2 tablespoons of ground beef and 1/4 cup of cheese mixture down the center of a tortilla. Roll up jelly roll style and place, seam side down, in a lightly greased 13x9x2-inch baking dish. Repeat with remaining tortillas. Spoon remaining tomato sauce over tortilla rolls; cover pan tightly and bake at 350° for 25 minutes. Uncover and sprinkle with reserved 1 cup cheese and continue to bake beef enchilada casserole, uncovered, for 5 minutes longer, or until cheese melts.
Beef Enchilada Casserole serves 6.

Bubble Pizza
1 lb hamburger, browned
2 tubes biscuits
1 can pizza sauce
1 cup shredded moz. cheese
cut biscuits into quarters (before baking) and place 1/2 in 9x13 baking dish, add hamburger and sauce, add remaining biscuits and sprinkle cheese on top - bake according to directions on biscuit tube (until biscuits are done)
Maid-Rites
1 1/2 lb hamburger, browned
1 can chicken gumbo soup
add soup to browned hamburger and mix until heated, serve on buns
