USING A SMALL VERY SHARP KNIFE SO BE CAREFUL,.?MAKE A SLIT FROM THE BASE OF THE NECK TO THE BASE OF THE HEAD AND OPEN UP THE SLIT.
stretch the neck slightly Stretch by pulling the head. With a sharp movement, cut off the head claenly at the top of the neck.
pull the neck skin right back and scrape off the fat. pull the neck and cut it off at the base.reserve it for making stock.
hold the bird firmly and pull out the wind pipe, crop and any fat from inside the neck cavity.
turn the bird around and cut the skin around the base of the knee joints. twist and pull off the lower part of the leg and tendens.
make a short slit in the vent to increase cavity opening. you can also make a slit above the vent to tuck the tail in later.
insert your fingers, keeping them near the breast bone, and dislodge the entrails. take great care not to break the gall bladder.
carefully pull out all the entrails: the stomach, heart, intestines and liver. cut the gall bladder away from the liver.okay like matey i hope you are getting this..using a sharp carving knife split the chicken through the breast bone right down the centre...iam not using google or cut in paste so its in the head .,next open it in two halves an lay the chicken skin side down on the table.Cut through the backbone.cut through the thigh away from z wings an breast of chicken.UsingZ(kitchen SCISSSORS to cut off the wings an cut the rest of the chicken into smaller pieces.

I have heard of this once on the Julia Childs show (back in the dark ages). It can be done. Try the French cookbooks.
