Only from scratch meals, of course. I'm not interested in things like hamburger helper or progresso soup!! Thanks : )

Good for you for avoiding the boxed junk!!

There are so many great things to make from scratch that take barely any time at all. Those most popular in our rotation are broccoli quesadillas, greek turkey burgers, black beans & rice, tuna casserole, baked potatos. We cook from scratch every night but some dinners take more time than others. But really, nothing takes more than an hour and it is so worth it. I have no idea how anyone can eat food from a box. Ick!

I actually run a home business where I teach people how to get away from boxed foods. It is refreshing to see someone like you who already has an interest in healthier options.

i would say the healthiest food i prepare is that i try to only cook with fresh vegetables...i shop at 2 different supermarkets and the one when you enter the store you are in the produce section first i think that is a great idea..we as americans have gotten away from fresh veggies..to the fast type food that can be done in a micro wave of which i dont own and probably never will....fresh meats is a must...if you ever go or have been in other countries you will find that the purchase their food almost on a daily basis....so you could say that basically all the meals i prepare are heathier than others...i try to stay away from from anything that is fast food or premade...due to the fact that they put so much stuff in it if you wrote a recipe for a similar dish it would take 2 pages to write in all the additives.....if that makes any sense.....a good example would be say it called for a can of tomatoes instead of the can i would use fresh plum tomatoes...and you will find by cooking with this method you will be cooking everything healthy......

Quick Chicken and tomato based pasta. Cook a diced chicken breast in the pan with a tiny bit of olive oil. Cook some angel hair or spagetti and then toss them both together with a tomato and basil pasta sauce. 5 minutes and not much fat.

one pound hamburger, one full size can of V-8 juice, two pencil size of thin spaghetti broken in half. two small chili powder, to your liking,

first cook the Hamburger, with onions, in tthree cups of water only less then five minutes if you like onions, to a brown, then add the V-8 juice, let it cook for 10 minutes, then add the spaghetti, you must brake then in half, I braken them in three quarter's... and then add Chile powder and salt and pepper to taste, This will last you at less a good week, it's a quick food after you make it. my wife adds, cheese, other thinks to it. but by it's self, the chili is good. but the big thing here is not to over cook it, because you will be using it more then once.

A salad, a sandwich with healthy ingredients, juices, tea, fruit. That's what I eat when I don't have enough time to cook.

Take a nice piece of cooked halibut, salmon, or chicken breast and serve it on top of a big mixed green salad with lots of extra veggies in it. I also like to serve it on top of jasmine rice with steamed veggies.
