I was thinking about this as I was frying tortillas for dinner (healthy chicken tacos).

olive oil is better..less cholestreol

but keep in mind that it does have the same amount of calories as vegetable oil

i don't know if it's just me but any recipe that has the word 'healthy' in it shouldn't have something that is fried

Olive oil should be consumed "raw" or it looses all its good properties. You should choose first cold pressed extra virgin olive oil also.

To fry food I read that canola oil is better because it has less of a tendency to change when heated.
Also canola oil is a very healthy oil.

I use canola oil to cook and olive oil to season salads and veggies.

Olive oil is much healthier than vegetable or canola oil. Olive oil has less trans and saturated fats, the unhealthy fats and more monounsaturated and polyunsaturated fats, the healthy fats. Buying the extra virgin olive oil is even better for you.

Are you thinking of DEEP frying it? I don't think it would work with olive oil. Frying on a pan with olive oil is better than say, butter, though.

I'm not sure about "frying", but, "cooking" in olive oil is much better for you in the long run!

It doesn't make foods healthier but it is healthier to use olive oil rather than vegetable oil. Although, remember to use it in small doses. One teaspoon is more than enough especially with a non stick pan.

when you heat olive oil, it loses all health values but its still healthier to cook with than vegetable oil.
