Mace is a covering for the nutmeg. Macey would be really cute!
Sorrel is also used in cooking fish and eggs. it is a herb tho
Coriander is used in savory and sweet dishes...Cori for short.
When making Corned beef and cabbage I use pickling spice and these are the ingredients in pickling spice: Cinnamon, Allspice, Mustard seed, Coriander, Bay leaves, Ginger, Chilies, Cloves, Black pepper, MACE, AND Cardomom.
Fennel is used in sausages and I love Irish sausage.
Saffron is a beautiful yellow/orange color.....to go with Ginger and Nutmeg.
Sage is also used in sausages and poultry seasoning.
Dill is used in pickles
Terragon is another spice but not sure how much it is used in Irish cooking. Terra would be nice
Marjoram is another spice.
Rue is a medicinal herb
I would use either Macey or Sorrel or Coriander (Cori)

Here are some spice and herb names that might sound kinda cute for a female - Cinnamon, Parsley, Angelica, Vanilla, Nigella, Olive, Agnus, Myrtle, Primrose, Cassia, Saffron, Marigold, Peppermint, Sesame, Tansy, Cayenne, Rosemary, Vasaka, Lavender, Poppy, Damiana, Anise. :-)

Anise, Paprika, Cassia, Cayenne, Cilantro, Harissa, La Kama, Vanilla, Fennel, Mint, Angelica, Annatto, Rosemary, Lavender, Saffron, Sorrel, Spearmint, Thyme, Sage, Watercress and Mastic are all used as spices and herbs and would be cute names for a girl. I couldnt find much for Irish spices.. but you could go with the herb names too... Good Luck! :D

Actually, I once had a couple of neighbors ( a married couple) whose female dog, was named Pepper. OK, you already have Ginger and Nutmeg. But you need a third name? Here are my suggestions: Oregano, Allspice, Parsley and Cayenne

Saffron...Well its not exactly a Irish spice, at least I don't think so, but it is green and green is Irish...lol.
I too have a dog named Ginger and I got her name from looking at a spice rack myself. What a small world this is.

My favorite Irish spice is WHISKEY. LOL ; )
CARAWAY seeds are used in rye bread and I like corned beef on a good rye bread.
A Sampling of Irish Ingredients: HERBS & SPICES: allspice, chervil, chives, cinnamon, mace, mint, nutmeg, parsley, thyme, watercress.
