Welfare Cake
"This cake is so moist that you would swear it was from a box!"
Original recipe yield: 1 - 9x13 inch pan.
INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

QUICK CHOCOLATE EGGLESS CAKE
1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar
Preheat oven to 375°F.
Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.
Combine dry ingredients directly in the pan. Mix all the wet ingredients
In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.
Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.
Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.

Aunt Dodie's Eggless Cake
1C sugar 1/2 C LARD, 1c SWEET MILK, 1 t. vanilla, 1/2 t. ground cloves, 1/2 t. .cinnamon,1t. salt, 1 scant t.. cream of tattar, 1 scant t. baking soda, 2 c Flour.
Cream sugar & lard. add milk& vanilla. add cloves, cinnamon & salt.Mix together cream of tartar, baking soda &flour. beat this into batter,a little at a time. pour into a greased tin, bake in moderate oven until done.

Just use your usual cake recipes, but use egg substitute (a liquid available refrigerated at the grocery store) in place of the eggs.
It should say some where on the carton, how much of it equals one egg.
