Dijon Chicken Salad Sandwich

4 cups chopped cooked chicken
1-1/2 cups chopped celery
1/2 cup KRAFT Mayo Real Mayonnaise
1/4 cup GREY POUPON Dijon Mustard
2 Tbsp. lemon juice
1/8 tsp. ground black pepper
8 lettuce leaves
16 slices rye bread

MIX chicken, celery, mayo, mustard, lemon juice and pepper until well blended.
PLACE 1 lettuce leaf on each of 8 bread slices.
COVER evenly with the chicken salad; top with remaining bread slices.

Curried Chicken Salad Sandwich

Dressing:
2 cups mayonnaise
1/2 cup commercial chutney
3 tablespoons mild curry powder
Sandwich:
6 bone-in chicken breasts
Kosher salt and freshly ground black pepper
1/2 cup coarsely chopped walnuts
1/2 cup dark raisins
3/4 cups finely chopped celery
4 croissants

To make the dressing: Combine the mayonnaise with the chutney and the curry powder in a small bowl. Mix well and set aside.
To prepare the sandwiches: Season the chicken breasts with salt and pepper then put them in a large skillet. Add water to cover. Put a lid on the skillet and simmer the chicken until it is cooked through, about 20 minutes. Remove the chicken from the poaching liquid and refrigerate for at least 1 hour. When the chicken is chilled remove the skin and cut the meat from the bones. Dice the meat and place it in a large bowl. Add the walnuts, raisins, and celery and mix well. Moisten the salad with the curry dressing. Cut the croissants in half. Fill each with chicken salad and serve.

Grecian Chicken Sandwich

1 env. GOOD SEASONS Garlic & Herb Salad Dressing & Recipe Mix
6 boneless skinless chicken breast halves (about 2 lb.)
3/4 cup plain nonfat yogurt
3 Tbsp. chopped cucumber
2 Tbsp. finely chopped onion
1/2 tsp. dried mint flakes
1/4 tsp. dried oregano leaves
1-1/2 cups shredded lettuce
6 pita breads, cut in half
3/4 cup ATHENOS Traditional Crumbled Feta Cheese

SPRINKLE salad dressing mix evenly over chicken. Refrigerate 10 minutes. Place chicken in 15x10x1-inch baking pan sprayed with cooking spray.
BAKE at 350°F for 20 to 25 minutes or until cooked through. Cut chicken into strips.
MIX yogurt, cucumber, onion, mint and oregano in large bowl. Add chicken and lettuce; mix lightly. Spoon into pita halves; sprinkle with cheese.

The Best Chicken Salad Recipe:

4 cups diced cooked chicken
3 hard-cooked eggs, chopped
1/2 cup sliced cucumber
1/2 cup diced celery
1 tablespoon chopped pimiento
1/4 cup diced sweet peppers, green, red, yellow or combination
1 teaspoon salt
mayonnaise
parsley sprigs and cherry tomatoes, for garnish, optional

PREPARATION:
Mix first 7 ingredients together; moisten with mayonnaise, a little at a time, until desired consistency. Garnish with parsley sprigs and cherry tomatoes, if desired.
Serves 12

this is the chicken salad of all chicken salads! a real crowd pleaser!

Chicken Salad Sandwiches

2 cups leftover lean chicken (Note #1)
1/4 small or medium onion
2 large stalks of celery, with a few leaves
1/4 medium red bell pepper
1 small carrot, finely shredded
1 clove finely minced garlic (optional)
3 tablespoons sweet pickle relish
3/4 cups reduced-fat or fat-free mayonnaise
lettuce
tomato
whole wheat or rye bread

Chop onion, celery and red pepper in a food processor. Add chicken and process again briefly.

Scrape into a bowl. Add mayonnaise, garlic and pickle relish. Stir to combine.

Spread a slice of bread (Note #2) with a thin coat of mayonnaise on one side. Spread another slice thickly with chicken salad. Top with lettuce, thinly sliced tomato and the mayonnaised bread. Enjoy!

Don't pack in lunches or take to a picnic unless it can be kept well chilled! This filling would spoil rapidly if kept in a warm place (but you knew that, right?).

just a bit of knowledge: If you don't have any leftover chicken, simmer a chicken breast in a little chicken broth or white wine until cooked through. Cool and shred

Asian Chicken Salad Sandwiches:

1/4 cup rice wine vinegar
1 tablespoon sugar
1 tablespoon sesame seeds
1 tablespoon dark sesame oil
1/2 teaspoon salt
4 cups chopped cooked chicken breast
3/4 cup sliced celery
6 radishes, sliced
3 green onions, sliced
3 tablespoons slivered almonds, toasted
4 (10-inch) flour tortillas
1 (4-ounce) container alfalfa sprouts

Combine first 5 ingredients in a jar; cover tightly, and shake vigorously. Chill.

Toss dressing with chicken and next 4 ingredients. Spoon evenly onto tortillas; top with alfalfa sprouts, and roll. Cut in half.

Yield: 4 servings

I make an Awesome Chicken salad. Start with a roasted chicken from safeway add mayo celery green onion celantro peanuts and then top sandwich with sprouts it is soooo good.

HIGHLAND PARK PHARMACY CHICKEN SALAD
SANDWICHES

2 c. chopped simmered chicken
1/4 c. mayonnaise
1 hard cooked egg, chopped
3 tbsp. chopped, scraped celery
1/4 tsp. salt
1/8 tsp. white pepper
12 thin or very thin slices whole wheat or white bread (Pepperidge Farm is perfectly sliced)
Butter, softened
Pimiento stuffed olives

Combine chopped chicken, mayonnaise, egg, celery, salt and pepper. Mix well. Spread 1/3 cup chicken salad evenly on one side of 6 slices of bread. Place the remaining 6 bread slices over the chicken salad to make a sandwich.

Spread butter on outside of top slice of bread; invert sandwich onto a hot sandwich maker, skillet or griddle. Cook until bread is browned. Spread butter on ungrilled side of bread; carefully turn sandwiches and cook until bread is browned.

Secure sandwiches with olive skewered toothpicks; cut crosswise into 2 pieces. Serve hot. Garnish with potato chips.

Makes 6 sandwiches.

i make the best chicken salad ever...i season and pan fry the chicken the cut it up, dice up hard boiled eggs onions green and red pepper mix it up with mayo and a little bit of mustard...its yummy...the peppers give it a really unique flavor...plus they make it pretty...the trick is to dice it all up very small so that none of the ingredients over powers anything else...

Dice the chicken, add mayo, diced celery (cut very fine), diced green onion, small dab of dijon mustard, grapes cut in half and chopped pecans.
