It was passed down in archaic hebrew originally, written down much after the material had been developed, but still written in a more 'modern' hebrew on papyrus scrolls when it was first written

The original Laws of Moses, commandments given to him by God, were memorized by the priests and recited to Israel... some were written on tablets of stone. Moses wrote the first four books of the Bible sometime in the last forty years in the wilderness, which he passed onto Joshua with the instruction that it should be read to Israel before going into the promised land. These were written on sheepskin. These were compiled and transcribed onto parchment by the priests and hidden, known as the Dead Sea Scrolls. Today, the Torah still exists on scrolls of parchment. The original books of Moses were written in a combination of Egyptian script and Hebrew. The Dead Sea Scrolls were written in Hebrew. The Torah is in Hebrew.

a document that was written 3,000 years ago with almost no early evidence of its writing is very hard to speculate on.

but going on the material of the time it was probably written in an early form of Hebrew similar to the Qumran scrolls. As to its content is probably has the same variant of the texts as the Masonic text dose with Qumran.

That being said you are likely looking at a document with the same general idea and message as our modern day Torah with the same events that are likely worded and described in a different manner but on the whole are extremely similar.

as for what it was written on, the same as today sections of parchment made out of animal skin.
