I made pancakes from scratch today with a fairly standard recipe, but they're coming out very thin and taste more like crepes than pancakes. Is there an ingredient I should add to make them fluffier?

To make pancakes fluffy..
Use a whisk or if you have a electric hand held beater the more air you get into the batter the more fluffier the pancakes will be.

When making pankcakes look at the batter. If the batter is liquidy it will be thin and flat pancakes add some more flour. Then beat it until it looks like its a fluffy batter (hard to explain) You almost want it too look like when you cook something on the stove and there are little bubbles in it, that is when you know it has been airated enough.

Hi there;

It sounds like you are not beating your pancake mix enough or you are allowing it to set too long before you hit the griddle with them. Also you may want to cut down on the amount of milk you are adding to your batter.

I would use either a hand mixer or electric mixer and then pour the batter immediately onto the griddle. Do not over beat your batter either. The trick to great pancakes is time and experience. Personally I like buckwheat pancakes made with buttermilk (very rich).
Try that next time you make pancakes. :)

The trick is to mix all the dry ingredients and then add the wet ingredients to the dry.
Stir gently and not until smooth. A few lumps of dry batter is perfectly OK and in fact desired.
Sounds like you over mixed and had too much liquid in your recipe.
Easy to make is Krusteaz buttermilk pancake mix and beer instead of water. Add blueberries to the already placed individual pancakes on the pan instead of in the batter wil mixing. It never hurts to put in a pinch of cinnamon to the dry ingredients.

One trick is to back off of the milk to make the batter thinner and cook at a lower temperature. This will give time to let the batter rise and make for really thick pancakes.

I befriended this French exchange student last year while I was studying at the University of Ottawa, and he used to make some pancakes for my friends and I. He put orange zest, and a touch of orange juice in the batter. It gives it this wonderful fragrance and subtle flavour that is really delicious

First off use whole milk, not skim or 1% or 2%. If that still doesn't work, try using buttermilk instead of regular milk. You'll also need to add half a teaspoon of baking soda and reduce your baking powder by a teaspoon.

Try using less milk, a little bit more flour, use an egg and that always helps. If you add nuts or berries to them also helps with the flavor

add a bit of baking soda and let the batter rest for a few minutes after mixing. They will be so fluffy you won't know what to do with yourself!

Add about 2 T powdered sugar and perhaps a little more flour IF you think they are too thin.

pumpkin is a squash so different types may be solid and mashed carrot might artwork for the beta carotene and candy potato, in all probability could use apple sauce too. I desire banana and yogurt and blueberries
