Cook with a splash of vanilla, some fresh ground nutmeg, and a pinch of ginger. Then serve with a handful of berries, some organic almonds or pecans, and unsweetened soy milk.
And btw, if "healthy" is your primary concern, be sure you are not using "instant" oatmeal. The processing increases the glycemic index a lot... go with the old fashioned, extra thick, or steel cut variety.

I use the old fashioned oatmeal as well.
Instead of sugar or substitute I add fresh fruit such as smalled diced apples and cinnamon, craisins and a pinch of nutmeg, mashed bananas and vanilla extract, frozen blueberries and cinnamon, strawberries and vanilla yogurt.
If you must sweeten use honey in moderation over Splenda.
Also almonds or walnuts on top can add crunchiness, especially if lightly dry roasted in pan prior to adding to top of oatmeal.

Avoid splenda...its preen proven to have side effects, and no research has yet been done on long term effects. Stick with honey.
I like it cooking it with vanilla soy milk, or just milk instead of water. I drop dried berries into it.
I've also mixed it with frozen mango chunks and some fat free yogurt.

I like all of the recipes but really like the brown sugar instead of honey the calories are very high in honey also in brown sugar.
