ESCARGOTS A LA BOURGUIGNONNE
(Snails with herb butter)

Drain 1 can of 24 count large cooked snails; then rinse under cold water and drain well.

To make herb butter, mix together 1/2 cup butter; 2 small cloves garlic, minced or pressed; 2 teaspons minced chives, shallots, or green onion and 2 tablespoons minced parsley.

Put a bit of butter in each of 24 clean,dry snail shells; then tuck in a snail. Seal snails in with remaining butter using all. Press buttered surface in grated Parmesan cheese (6-8 tbsp)
Arrange shells, cheese side up, in 4 small pans. or 4 individual baking pans.

Bake uncovered, in a 500F overn for 7 minutes or until cheese is lightly browned and butter bubbling. Serve with French bread or rolls to soak up garlic butter. Makes 4 servings of 6 snails each.

Escargot are those garden variety snails. Just kidding.
I found some recipes and some sound pretty good.
Here's one:

24 escargot (1 can)
White wine
1/4 c. Panchetta, cooked & finely chopped
24 lg. mushrooms
2 sticks butter
2/3 c. chopped garlic
1/2 c. chopped parsley
2 tbsp. Dijon mustard
Dash Worcestershire sauce
1/3 c. finely chopped almonds
2 tsp. white pepper

Simmer escargot in white wine for 30 seconds. Drain and set aside. Divide Panchetta among mushroom caps. Top with escargot. Combine remaining ingredients. Cover each escargot with mixture. Bake at 500 degrees for 10 minutes. Serve with French bread slices.

Try this - Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

It is called Escargot. You can order it at the resurant La Caille. The web site is www.lacaille.com. I went there for school, and loved the place it is verry pretty.

escargot they are purchased in a can with the shells seperate its a tube they are mostly served with a strong garlic and butter sauce...the have a untensil just for eating them it holds the shell and a small pin like thing to remove them...the utensil used for holding the snails looks like your eyebrow curler....they are really tasty but costly......

Escargot....which is sooooooo good! try it with french or garlic bread, it makes it easier to eat
