Foie Gras is the chopped liver pate made from geese. In France, the geese are forcefully and overfed to enlarge their livers. It is a delicacy and the French practice of producing it has come under a lot of fire from animal activists opposing the cruel force feeding. It is quite an expensive delicacy I might add.

Fois gras is goose or duck liver. I think Chicago actually banned it from being served in restaurants for unhumane treatment of the animals.

I also read recently that Chicago has banned the sale of fois gras. Because of the inhumane cultivating practices.
