Roasted/grilled anything - asparagus, brussels sprouts, potatoes, tomatoes, onions, squash, steamed broccoli.


Grilled Asparagus with Tomato and Mozzarella Salad
Serving Size : 4

2 bunches medium asparagus (about 2 pounds), peeled and trimmed
2 tablespoons extra virgin olive oil, divided
2 cups grape or cherry tomatoes, halved
8 ounces fresh mozzarella cheese, cut into ½-inch cubes
2 tablespoons chopped fresh flat leaf parsley
1 teaspoon finely grated lemon zest
1 tablespoon freshly squeezed lemon juice
1 teaspoon Kosher salt
¼ teaspoon crushed red pepper flakes
Freshly ground black pepper

Blanch the asparagus in boiling salted water until crisp-tender about 2 minutes. (Alternatively, asparagus can be steamed.) Brush asparagus with 1 tablespoon of the olive oil and set aside.

Toss tomatoes and mozzarella cheese in a large bowl with remaining 1 tablespoon olive oil, the parsley, lemon zest, lemon juice, salt, red pepper flakes and black pepper to taste.

Heat a grill pan (or outdoor grill) over medium heat. Grill asparagus, turning occasionally, until tender and lightly charred, about 5 minutes. Cut asparagus in half crosswise and arrange the upper portions, spoke-like, tips out, on a serving dish. Cut the lower portions into ½-inch pieces and toss with the tomato and cheese mixture. Mound the salad in the center of the tips and serve. Serves 4 – 6.

Baked Corn

INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

The Mother of all Potatoes

1 package O'Brien potatoes
1 16oz. package of sour cream
2 cans cream of potato soup
4 cups shredded cheddar cheese

Preheat oven to 350 degrees. Mix potatoes, sour cream, and 2 cups of shredded cheese until well blended. Pour into a 13x9 cooking pan, and top with remaining cheese. Bake at 350 degrees for 1 hour 15 minutes, or until golden brown around the edges.

Something different:

Put steamed broccoli, 2 baked potatoes, Salt & Pepper, 3 Tbsp. Butter, 1 small pkg. of cream cheese (softened) into food processor. Blend.

It tastes awesome, trust me, & the green color will have people saying, "what the...?"

Cucumber-red onion-tomato salad

Steamed broccoli or cauliflower

Halved acord squash baked with butter, salt and pepper

A green salad with raisins and sunflower seeds and a little grated cheddar cheese.

Steamed rice with a few peas and diced carrots cooked with the rice.

Roastednew potatoes....Cut into fourths...spread on baking pan...rub olive oil and 2 cloves of garlic all over. Add a dash of salt and pepper....bake at 425 for 35-45 minutes....nice and crispy outside..fluffy goodness on the inside

Fresh Broccolli or fresh Asparragus grilled with spiced butter and lime.... Mashed potatoes with a lot of stuff, like bacon, onions, roasted peppers, roasted minced garlic, different kind of cheese... you get the idea.
