Bong Bong Chicken
Ingredients:
1 green onion, chopped
2 tablespoons grated ginger
1 tablespoon light soy sauce
1 tablespoon sesame paste (tahini)
1 tablespoon vinegar (rice is best)
1/2 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon dark sesame oil (NOT the light kind)
2 tablespoons peanut oil
1 pound boneless chicken, cut into small chunks or slivers
2 tablespoons peanut oil
cayenne pepper, to taste
cilantro to garnish (optional)
Directions:
Mix onion, ginger, soy sauce, sesame paste, vinegar, sugar, salt, and sesame oil. Heat peanut oil until hot. Remove from heat. Stir in cayenne pepper and stir. Add sesame/soy mixture. Stir well, then taste. Add more cayenne if you want it spicier.
Put chicken on a serving platter and pour on the sauce. Garnish with Chinese parsley, if desired.

After searching high and low in my town for a jar of tahini, I couldn't find any! I went searching online and found this easy recipe. This is MUCH cheaper to make yourself, and only takes a couple minutes.

4 cups sesame seeds
1/4-1/2 cup vegetable oil

Preheat the oven to 350° F.
Spread the sesame seeds on a shallow baking tray and bake, shaking frequently, until fragrant, 8 to 10 minutes.
Do not brown.
Cool.
Put the sesame seeds in a blender or food processor fitted with the metal blade.
Add the vegetable oil.
Process to a smooth paste, about 5 minutes.
Add more oil if necessary, to bring the paste to a thick pouring consistency.
Tahini will keep stored in a tightly covered jar in the refrigerator for several months

if you add lemon juice a little shreded or mashed garlic and some salt .... then you will make an amazing tartar sauce to go on fish , add water to choose the thickness that you prefur
