EC Honey Directive

It is intended to make the rules on the conditions for the production and marketing of honey more accessible and bring them into line with general Community legislation on foodstuffs, particularly on labelling, contaminants and methods of analysis. The most recent version of the text is enclosed.

EC Honey is honey which meets the guidlines for manufacture and production conditions, NON EC honey does not.

I surmise that EC honey is honey produced in the European Community and non EC honey is not produced in the European Community.

EC honey is from countries within the European Community (EC).

Non-EC honey is not.

Honey can be used in many delightful dishes. The heavenly honey grand prizewinner is Carolyn Walker, a member of Trinity Valley EC, for Spice Bars. Walker will receive a copy of The Second Typically Texas Cookbook and an assortment of seasonings from McCormick.

Spice Bars
Combine:
3/4 cup oil
1/4 cup honey
1 cup sugar
Add:
2 cups sifted flour
1/2 teaspoon salt
1 teaspoon soda
1 1/2 teaspoons cinnamon
Mix well.
Add:
1 egg
1 cup pecans, chopped
Press into a greased 13x9 inch pan. Bake at 350 degrees for 30 minutes, no longer.

Icing
1 cup powdered sugar
1 teaspoon vanilla
1 tablespoon butter, melted
1 tablespoon water

Mix and spread on spice bars as soon as you take them out of the oven. Cut into bars while warm and place in an airtight container.



Honey Lemon Drops
1 1/4 cups shortening
1 1/2 cups granulated sugar
6 tablespoons honey
2 eggs, large
2 teaspoons lemon extract
1 teaspoon vanilla extract
3 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt

Preheat oven to 375 degrees. Cream shortening, sugar, honey, eggs and extracts.
Mix dry ingredients. Using a fork or wire whisk, stir dry ingredients into the creamed mixture in small amounts until well blended. Drop by teaspoonfuls onto a greased cookie sheet. Bake 10 to 12 minutes or until lightly browned. Remove to wire rack to cool. Store in a tightly covered cookie tin or container. Makes approximately 4 to 5 dozen.

Honey Baked Bananas
6 bananas, just ripe
2 tablespoons butter
2 tablespoons lemon juice
1/4 cup honey

Peel bananas; place in shallow baking dish. (Bananas with skins still tipped with green work the best.) Melt butter; combine with lemon juice and honey. Brush mixture on bananas, coating well. Bake at 325 degrees for 15 minutes or until warm and well glazed.

Oat 'N Honey Bars
Combine the ingredients below in a mixing bowl and stir together well:
3 cups quick-cooking oatmeal
1 cup flaked coconut
1 cup chopped pecans
1 cup flour (all-purpose or self-rising)

In a heavy saucepan heat the following ingredients just to boiling:
1 1/2 cups brown sugar, firmly packed
1 cup butter or margarine
1/3 cup honey

Pour the liquid over the dry ingredients and mix to combine thoroughly. Spread the dough in a greased 10x15 inch pan (jelly roll pan). Bake at 350 degrees for 10 to 15 minutes, just till light brown in color. Immediately cut into 24 squares. Let cool before lifting from pan.
