Shrimp Stir-Fry with Lemon Rice


Preparation Time: 15 minutes
Marinade Time: 15 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients

1 cup chicken stock
1 cup water
1 cup long grain rice
3 Tbsps. lemon juice
2-1/2 Tbsps. cornstarch
1/2 cup cold water
2-1/2 Tbsps. soy sauce
2-1/2 tsps. sugar
1 Tbsp. curry powder
2 Tbsps. peanut oil
1 lb. medium shrimp, peeled and deveined
1 Tbsp. plus 1 tsp. dry sherry or chicken stock
2 tsps. Oriental sesame oil
6 oz. snowpeas\cooked
2 cloves garlic, minced
3 scallions, thinly sliced



Instructions

Combine stock and water in a saucepan over medium-high heat. Stir in rice and pepper to taste and bring to a boil. Immediately reduce heat to low. Cover and simmer 20 minutes, or until rice is tender and liquid is absorbed. Remove from heat and let sit 5 minutes, covered. Sprinkle lemon juice over rice and fluff with a fork.

While rice is cooking, dissolve 1-1/2 Tbs. cornstarch in 3 Tbs. cold water in a bowl. Add half the soy sauce, 1 tsp. sugar, curry powder and half the peanut oil. Mix thoroughly. Stir in shrimp and toss to coat. Marinate 15 minutes.

Combine remaining cornstarch and cold water with sherry, sesame oil, remaining soy sauce and remaining sugar in a jar with a tight-fitting lid. Shake vigorously and set aside. Heat remaining peanut oil in a wok or heavy nonstick skillet over high heat. Stir-fry snowpeas 2 minutes, or until almost tender. Discard all but 2 tsp. oil from skillet. Add shrimp, marinade and garlic and stir-fry 1 minute over high heat. Add soy sauce and cornstarch mixture and sauté 1 minute, or until sauce begins to thicken. Remove from heat. Stir in scallions. Serve over rice.

Quick Chinese Chicken Salad

INGREDIENTS
1/4 cup rice vinegar
1 tablespoon sugar
3 tablespoons Kikkoman Soy Sauce
2 tablespoons vegetable oil
1 teaspoon Oriental sesame oil
1 (16 ounce) package mixed salad greens, washed and drained
1/4 cup chopped fresh cilantro or parsley
2 medium-size cooked chicken breast halves, skinned, boned and shredded
DIRECTIONS
Combine vinegar, sugar, soy sauce, vegetable and sesame oils in large bowl, stirring until sugar dissolves.
Add salad mixture and cilantro, tossing to coat all pieces.
Add chicken; toss to combine. Serve immediately.



Quick and Hot Dumpling Sauce
!
For best results, cover and refrigerate for 1 hour to allow the flavors to blend.

Yields about 1/2 cup
INGREDIENTS:
4 tablespoons light soy sauce
4 tablespoons mushroom soy sauce
2 tablespoons red wine vinegar
2 to 3 teaspoons granulated sugar, as desired
2 teaspoons chili oil
1/2 teaspoon sesame oil
Salt, to taste
3 teaspoons minced ginger
2 large clove garlic, minced

Fried Rice

2 cups uncooked instant rice
2 cubes chicken bouillon
1 cup snow peas
1 cup chopped onions
1 cup bean sprouts
3 eggs, beaten
2 tablespoons vegetable oil
2 teaspoons soy sauce, or to taste
DIRECTIONS
In a saucepan bring 4 cups of water to a boil. Add chicken bouillon and rice, and stir. Cover, remove from heat and let stand 5 minutes, or until liquid is absorbed. Refrigerate overnight.
To the rice add snow peas, onions and bean sprouts.
In a small skillet over medium heat, scramble the eggs; add to rice mixture.
Heat oil in a large skillet or wok over medium heat. Fry the rice mixture with soy sauce until liquid evaporates; be careful not to fry until crisp.

Preparation time : 10 minutes
1) Boiled choy sum or bok choy dip with oyster sauce
(Just boil the vegetables, drain well, dip with oyster sauce)
2) fishball rice noodle
(boil 10 frozen fishballs with 2 packs of rice noodle, mai fun, add a few drops of sesame oil or chilli oil when serve)
or
eggs + ham fried rice (if you have leftover steamed rice)
- cut ham into small cubes, heat 3 tablespoon of cooking oil, scamble eggs till half cooked, stir fry ham for 1 minute, add rice into wok, stir fry quickly for 2 minutes, add salt to taste.

I take a raw chicken breast and cut it in strips. I mix a little soy sauce and corn starch and marinade the strips in that (if you don't have corn starch, don't worry about it).

Then I cut up a onion in large pieces, quarter or slice some mushrooms, dice a zucchini in large pieces, slice some celery...whatever you have in the vegetable drawer.

I saute the chicken pieces in a little bit of oil, then add the veggies in order of "hardness": carrots, onions, zucchini, mushrooms, etc.

Add some of the marinade that you soaked the chicken in. Add a tiny bit of flour if you didn't have cornstarch.

Serve over steamed rice.

Go to Costco if you have a membership, or find someone who does. They have great orange chicken you just bake in the oven then add the glaze, and pot stickers you just have to boil and they come with a dipping sauce. Top it off with egg rolls.

Try Celery and scallops in chicken sauce and stir fry beef with Kai lan(or choy sum).
celery (peeled,diced,blanched)
Scallops
Garlic puree
Chicken broth
corn starch
water
salt, pepper
Sesame oil
Blanch celery,Heat a wok add oil,then garlic,quickly stir fry the scallop till opaque add in chicken broth and corn starch with water to thicken it.season to taste then add in celery.
Beef (thick sliced)
Kay lan
oyster sauce
corn starch
s & p
Sesame oil
Blanch the V,G,stir fry the beef add oyster sauce and water then starch,season to taste and add v,g at the end.mix well.

one pack of chicken breast diced up, soy sauce, scrambled egg, green onion, cook the chicken first, dice and cook in frying pan, then boil rice, and the scramble the egg, combine all with soy sauce to tase. humm. enjoy
