I've seen others posted on the web, but the fudge recipe in the book I had (and lost) called for baker's chocolate, not cocoa.

CHITTY CHITTY BANG BANG FUDGE

1/4 cup Butter
4 2/3 cups Sugar
10 oz. Evaporated Milk (two small cans)
2 oz. Unsweetened Chocolate
2 Tbl. Corn Syrup
2 Tbl. Water
1 tsp. Vanilla
Our traditional family recipe came out of the back of the book "Chitty Chitty Bang Bang." It is even richer than traditional fudge, and absolutely delicious. Directions: Cook over medium heat, stirring constantly until melted. Cover for 5 minutes over low heat, to steam down the sugar crystals. Cook, stirring occasionally, until mixture reaches soft ball stage. let sit for 15-20 minutes, add 1 teaspoon of vanilla extract, and beat just until mixture starts to stiffen and loses its gloss. Add nuts (if desired), and our into a buttered pan. Let cool until firm. I now use a hand mixer to beat the fudge, but you have to be very careful because there is about a 5 second window between when the fudge is ready to pour, and when it is too stiff to pour. Beginners might want to stick with a wooden spoon, or use the hand mixer for a couple of minutes and switch to a spoon.

REMARKS:
A solid fudge recipe which uses Corn Syrup as an alternative sugar (although there's lot of sugar here too!). The 2 tablespoons of water is probably not necessary given that 10 oz. of evaporated milk are used

Chitty-Chitty Bang-Bang Fudge
Categories: Candies
Yield: 1 Servings

2 c Sugar
4 tb Cocoa
1/4 lb Butter (or margarine)
2 ts Light corn syrup
1 cn Evaporated milk, small
1 ts -Water

Mix all ingredients and stir over low heat.
Cook to soft ball stage when dropped in cold water.
Beat by hand until mixture loses gloss. Chopped nuts can be added.
Pour into a greased 8 x 8-inch pan. Cut into pieces. Cool.


Good fudge! This was a recipe from the Chitty-Chitty Bang-Bang story
book .
