cant get any easier. when i cook salmon for guests they always give me lots of compliments.

preheat oven at 350
cover fish with butter
sprinkle with salt, pepper, lemon, and dill as desired
bake for 20-25 min

salmon is ALWAYS better with lemon and dill. everyone i serve this to cant get enough. hope this helps?

Put the salmon fillet in foil. Add...

- Garlic or onion (whatever you like)
- Butter
-Lemon

Wrap salmon in the foil skin down, and bake in the oven for about 30 minutes and 350 degrees for normal thickness. Longer if really thick. Really juicy and tasty.

You could simply microwave it. Place the salmon in a microwave-safe bowl and sprinkle with lemon juice and 1/8 teaspoon salt. Microwave 2 to 3 minutes or until fish is cooked through.

You could cook a side dish like fettuccine or rice and eat with the salmon. Yum! I also like to add a little dill in addition to the lemon juice.

Two salmon fillets
Marinate for 1/2 hr at room temp.in
Two (2) oz. Sour Mash whiskey
one (1) tsp.brown sugar
one (1) tbs tarriaki or Worcester sauce

Rub some Extra Virgin Olive Oil on entire fillet... sprinkle Salt & Pepper on one side... place fillets, seasoned side down in a hot saute pan. Season the other side while cooking.

Cook on med. high for about 3 min. per side. They should be nice & seared. NEVER overcook fish... YUK. Serve w/ Lemon Juice and/or a hot sauce/mayo remoulade.

Oven-Roasted Salmon, Asparagus and New Potatoes
Serving Size : 4

1 pound small new potatoes, halved
2 Tbsp olive oil
1/2 pound asparagus, trimmed and sliced on the diagonal, 1-inch long pieces
1 Tbsp chopped fresh dill
1 strip of lemon zest
2 garlic cloves, chopped
salt & freshly ground pepper, to taste
2 salmon steaks (10 oz each), cut about 1-inch thick
1 lemon cut into wedges

Preheat oven to 400F. In a large, shallow baking dish coat potatoes with olive oil. Arrange potatoes, cut side down, in the baking dish and roast for 10-12 minutes, until the potatoes begin to brown on the bottom. Turn the potatoes over and roast another 10 minutes until browned on top. Remove dish from the oven.

Toss asparagus with chopped dill, lemon zest, garlic, salt and season with pepper. Add asparagus mixture to the potatoes and stir to combine.

Push vegetables to the side of the dish to make room for the salmon steaks. Return the baking dish to oven and roast the salmon and asparagus 10-12 minutes, or until fish is just cooked through.

Remove the skin and center bones, and arrange on individual plates before serving. Garnish with fresh dill and lemon wedges.

Oriental Salmon Packets


Serving Size : 4

4 sheets (12x18-inches each) Heavy Duty Aluminum Foil
4 salmon steaks or fillets (4 to 6 oz. each), thawed if necessary
1 package (16 oz.) frozen stir fry vegetables with broccoli, carrots and water chestnuts
1/2 cup Oriental salad dressing

Preheat oven to 450°F or preheat grill to medium-high.

Center one salmon steak/fillet on each sheet of Aluminum Foil. Top with vegetables. Spoon salad dressing over salmon and vegetables.

Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets. Bake 16 to 20 minutes on a cookie sheet in oven OR Grill 12 to 15 minutes in covered grill.

BBQ. or in a frying pan with garlic butter. But don't try and turn it till the salmon come off the grill or pan easily. It will un stick itself when it is ready to turn. If you do it too early it will fall apart

I usually fillet it and put olive oil and a bit of butter with garlic salt and cilantro. I throw it in the microwave for about 10mins.

The quickest and easiest way is to saute it after letting it soak in some spices! It's SO delicious!!!! It has so much flavor and adds some zest to your meal!!!
