i wanna know if they can do that just out of curiosity can they obtain that info just by entering that plate number or does it just give them your registration info?

It was on the news, I think last year or maybe this year not quite sure. But I am certain that police officers can input or scan your license plate details while they are behind you in their car which would then be passed to the station, and then they would know whether you have insurance or not. Clever devices they are making nowadays. But I don't know whether they are using them yet. Just wait and see, or just get the insurance. Toss a coin.

If you live in a state that requires you to note your insurance company and policy number, that is part of your registration and they will find out. That only tells them the last insurance company you told the DMV about. You could have changed companies or let your policy cancel since then.
