butter, butter, butter.
i dont keep them in long either (for example, if the recipe says bake them 8 - 10 min, i always bake them at the shortest time. this one being 8 min). also a few minutes before their done i spray them with the butter pan or some other kind of spray butter and put them back in the oven. this also works really well on biscuits. they always come out tender and everyone loves them.
hope this helps?

Add more butter and cook for about 5-10 minutes less than the recipe says.

Stop and think about it. What makes a cake light and fluffy. Cake flour? Corn syrup extract? Baking powder? If you want goooooey melt down marshmellows and add to the the mix. Compare your recipe to what's in a cake and adjust.

Taking them out of the oven a bit before they're completely done--they'll stay soft for days.

I don't think that there is one. You should take the cookies out of the oven as soon as they brown. If they have set and do not appear runny, take them out, and let cool. Use a spatula to remove.

Don't put in too much flour. the dough will start to pull from the side of the mixing bowl when the dough is ready. it changes each time; it'll never be exact.

You have to take them out of the oven a little sooner than usual. over cooking makes them crisp

Extra butter than what the recipe calls for!
