Add some chopped tomatoes and water to dilute the sauce. And as my Nan used to do (and it worked a treat), add some peeled quartered potatoe (about 2 - depending on the quantity of hot curry you currenty have) it seems to soak up / cancel out the hotness, and also tasted pretty good too !

Take out half the liquid and replace with coconut milk, water or tomatoes, whichever suits your recipe. Or just add any of the above, but you will end up with a greater quantity of curry than you set out to cook, you could always freeze it!

use less spice or get another mixture of curry. there are 5 blends of curry spice from mild to hot. or add a little coconut milk.

i would put yogurt or cream in the curry this calms down the hotness
