Use an old glass spaghetti sauce jar, fill with cloves of garlic and then cover with cooking oil. It will keep indefinitely in the fridge.

If you want them ready to cook and don't mind the olive oil thing, that's a good way. Being a rep for organic produce, placing the heads of garlic in an open paper sack and leaving on your kitchen counter is actually the best method. The little crock with the holes is a useless gimmick because the heads are too closely packed. The closer to harvest, the greater the taste because the natural oils that carry the flavor are at their highest concentration. For a real treat, try buying "green garlic" at your local farmers' market (mid spring).
