Pumpkin Pancakes for Fall
1 egg
1 cup milk
1/2 cup cooked pumpkin or canned pumpkin
3/4 cup white enriched flour
3/4 cup whole-wheat flour
2 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground ginger
2 tablespoons vegetable oil
1/2 cup chopped pecans (optional)

Combine all the ingredients in a mixing bowl and stir just until blended.
Pour the batter onto a hot griddle that has been lightly oiled.
Flip the pancaked over when bubbles break around the edges.
Serve hot with butter and syrup if desired.

I get a box of Aunt Jemima pancake mix and follow the package directions. The recipe generally says to just add water; however, I make them tastier and more nutritious by adding milk instead, and an egg. Then beat well and add blueberries, granola or wheat germ for an added boost of nutrition and taste. Is that simple enough? For buttermilk pancakes, just add buttermilk. Don't have buttermilk? Take regular milk and put in a teaspoon of vinegar. Mix well and let stand for a few minutes. Or substitute yogurt. The only way you can ruin a pancake is to flip it too soon. Wait until you see a lot of little bubbles on the pancake before you turn it on the other side. Good luck!

Oatmeal Pancakes

1 egg
1 egg white
1 1/2 c skim milk
1/4 c applesauce
1 tsp vanilla
1 c oatmeal, quick oats
1/4 tsp cinnamon
1 c whole wheat flour
1/8 c sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

In a medium mixing bowl, mix together the first 5 ingredients.

Stir in the remaining ingredients until well blended.

Measure each pancake out with a 1/4 cup (makes 10). Pour onto grill, flipping halfway.

Top with syrup, peanut butter, whipped cream or your favorite fruit.

Blueberry Buttermilk Pancakes:

Notes: For consistency, cooks at Marston's in Pasadena, California, prefer canned Maine blueberries in syrup; we like fresh blueberries in their batter too. Serve these pancakes with butter and warm maple syrup.

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2 1/2 cups buttermilk
1/4 cup (1/8 lb.) butter or margarine, melted
1 cup fresh blueberries, rinsed and drained, or canned blueberries, drained (see notes)
Salad oil

1. In a bowl, mix flour, baking soda, baking powder, and salt. In a small bowl, whisk eggs, buttermilk, and butter until blended. Stir egg mixture into flour mixture, then gently stir in blueberries.

2. Place a nonstick griddle or a 12-inch nonstick frying pan over medium heat (350°). When hot, coat griddle lightly with oil and adjust heat to maintain temperature. Spoon batter in 1/3-cup portions onto griddle and cook until pancakes are browned on the bottom and edges begin to look dry, about 2 minutes; turn with a wide spatula and brown other sides, 1 1/2 to 2 minutes longer. Coat pan with more oil as necessary to cook remaining pancakes.

3. Serve pancakes as cooked, or keep warm in a single layer on baking sheets in a 200° oven for up to 15 minutes.

Yield: Makes about 20 pancakes; 5 to 6 servings

Super easy, fast and delicious pancakes!

1 egg
1 cup flour
3/4 cup milk
2 tablespoons margarine, melted
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt

Beat egg until fluffy.
Add milk and melted margarine.
Add dry ingredients.
Mix thoroughly.
Melt butter in pan, pour in batter to desired size. Flip when batter gets all bubbly. YUM!

2 cups (Original) Bisquick mix - 1 cup milk - 2 eggs ~ Stir it all together (OK if it's a little lumpy) - Pour into greased pan (about 1/4 cup per pancake, it's up to you on size) - when edges are dry and middle is bubbly, flip over for 30 seconds to a minute ~ Transfer to plate and dig in
