Probably a food allergy. I'm allergic to strawberry jello. Whatever they put in the jello to make it takes like strawberry actually gives me a headache and makes my tongue swell. Best bet, stay away from jello. It that is the only food that causes you to have a headache, check the label and compare to other things you eat. I bet you will find an ingredient in jello that doesn't show in other foods you eat. You are more than likely sensitive to that ingredient.

If you're eating the sugar-free kind, it could be the artificial sweetener. Some people have a sensitivity to red dye #40, which is in a lot of things, even things that aren't really red.

Sugar in a liquid form gets absorbed into the bloodstream quickly. Does the same thing happen with non diet soda?

Yes, that's right it's the food coloring. Red in particular can have an adverse effect on some people.

You probably have an allergy to the dye, but it could be anything that is in it.

Maybe you are eating it too cold.

Or maybe your body does not like the pork products in gelatin.
