tomarrow is the last day for us working this specific job and we are having a potluck. i picked " dessert " what are some ideas ?

What I found that is always a hit, is a baked cheesecake. Or how about being that its the time of year is a pumpkin roll. Yum.

I'm glad you specified dessert, as I was going to mention the ubiquitous casserole. Nothing wrong with casseroles per se, except that when they stand too long on the buffet table and everyone dips into them, they become less and less appetizing and could harbor some nasty little microbes.

I usually bring brownies as a dessert for a potluck. They are simple enough to make from a prepared mix, and you can add walnuts, pecans, chocolate chips, peanut butter or mini marshmallows, or any combinations thereof, to create your own "masterpiece". Brownies stay fresh and uncontaminated, and when they're gone, they're gone. You don't have an icky casserole to wash when you've carried it back home. It's rare that any brownies would be left over, but if they are -- just take them home and have an extra treat for yourself.

You might need a double recipe of this..can use other flavor instant puddings if prefered.

PISTACHIO DREAM CAKE: (4 Layers)
1 1/2 cups flour
1 stick margarine, melted
1/2 cup walnuts, finely chopped
1 (8 oz.) cream cheese, softened
1 cup confectioners sugar
1 (8 oz.) Cool Whip, thawed
2 (4-oz.) packages Instant Pistachio Pudding
3 cups milk
In a small bowl; combine flour, margarine and walnuts. Spread evenly into a greased 9x13 baking pan. Bake at 350 degrees for 15 minutes and set aside to cool.
In a medium bowl; combine cream cheese, confectioners sugar and 5 Tablespoons of Cool Whip. Pour this mixture over the cooled crust layer and let set for 15 minutes.
In a large bowl, combine pistachio pudding and milk; stirring until thickened. Pour pudding mixture over cream cheese layer and chill for 15 minutes.
Top off the final layer with the remaining container of Cool Whip. Refrigerate. Serve.

KRISPY's CARROT CAKE:
2 cups sugar
1 1/2 cups Crisco oil
4 eggs
2 1/4 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups grated raw carrots
1 1/2 cups chopped walnuts
Mix in large bowl, sugar, oil and eggs; beat well.
In separate bowl, sift flour, salt, baking soda and cinnamon.
Blend dry ingredients into egg mixture. Stir in carrots and nuts. Pour into prepared pans.
Bake at 300 degrees for about 60 minutes or until toothpick inserted in center comes out clean. Cool well before icing.

I really enjoy chocolate frosting on carrot cake.

CHOCOLATE FROSTING:
1/2 cup margarine or butter, softened
1 3/4 cup confectioners sugar
1/4 cup Hershey's cocoa
1 teaspoon vanilla extract
3 Tablespoons cold water
Cream all ingredients together until spreading consistency.

CREAM CHEESE FROSTING:
1 (8 ounces) package cream cheese, softened
1/2 cup margarine or butter, softened
1 teaspoon vanilla extract
3 cups sifted powdered sugar
1 Tablespoon milk
Cream all ingredients together until spreading consistency.

This is very simple...pistachio pie.

1 box Jello pistachio pudding mix
1 can (15 oz. crushed pineapple) slightly drained
1 12 oz. container Cool Whip
1 graham crust

Put the pineapple in a bowl, sprinkle with pudding mix, stir, wait 10 minutes. Fold in Cool Whip, dump into the crust and whack it in the fridge.

Easy, and thanks to my great-aunt for teaching me that.

What is realy fast easy and healty is fruit salad.I make it with seedless grapes a can of mixed fruit coconut and strawberrys with whip cream and a little apple juice you can also add almonds and what ever fruits you perfer.It is realy good.

Oooey gooey butter cake - this is awesome. Very sweet but I always get tons of compliments and it is fairly easy to make.
