It was great but as I was LITTLE, I only was allowed one bite, coffee was considered very bad for us then. By the time I was old enough to eat a slice she had lost it. Now that I have discovered yahoo questions I am hoping to find it. Thanks.

Coffee Cake

1/3 cup granulated sugar
2 tablespoons instant coffee crystals
1 1/2 teaspoons ground cinnamon
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 egg, slightly beaten
1 cup plain yogurt
3 tablespoons butter, melted
1 teaspoon vanilla
1/4 cup chopped walnuts
2 teaspoons instant coffee crystals
2 teaspoons milk
1/3 cup sifted powdered sugar

55 minutes 25 mins prep


Preheat oven to 350.
Grease the bottom and 1/2 inch up the side of an 8x8x2 inch baking pan.
In a small bowl, stir together the 1/3 cup granulated sugar, the 2 tablespoons coffee

crystals, and cinnamon.
For batter: In a large bowl, stir together flour, 1/2 cup granulated sugar, baking powder,

baking soda, and salt.
In another bowl, combine egg, yogurt, melted butter, and vanilla. Add yogurt mixture to

flour mixture; stir until moistened.
Spread half of the batter in prepared pan. Sprinkle with half of the coffee mixture.
Repeat layers. Using a knife, swirl batter slightly. Sprinkle with walnuts.
Bake about 30 minutes or until a toothpick inserted in the center comes out clean.
For icing: In a small bowl, stir the 2 tsp coffee crystals into the milk until dissolved. Stir in

powdered sugar until smooth.
Drizzle over coffee cake. Serve warm.

This is an easy chocolate cake that I've adapted. I've never had a complaint!

3 Cups flour
2 Cups sugar
6 TBS cocoa powder
2 tsp baking soda
1 tsp salt
1 TBS vinegar
3/4 cup canola oil
2 tsp vanilla extract
1 cup cold water
1cup espresso

Combine flour sugar, cocoa, baking soda, and salt in mixing bowl. Make a well in dry ingredients and add the vinegar, oil, and vanilla. Pour water and espresso over all and beat until smooth. Pour into greased 9X13 pan and bake at 375 for about 30 minutes. Cake is done when toothpick is inserted in center and comes out clean/with a crumb attached. Cool completely.

Mocha Frosting
Beat until fluffy (approx 4 mins.):
4 oz cream cheese, room temp.
6 TBS unsalted butter, room temp.

Sift 2 cups confectioners sugar and 6 TBS cocoa into butter mixture and beat, Slowly adding 1/3 Cup espresso. If frosting is too stiff, use 1-3 TBS heavy cream to thin.

Aunt Anne's Coffee Cake.
INGREDIENTS
2 cups all-purpose flour
3/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter
1 egg
3/4 cup milk, or as needed
1 1/2 teaspoons vanilla extract

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Make the streusel topping: In a medium bowl, combine 1/4 cup flour, 2/3 cup sugar and 1 teaspoon cinnamon. Cut in butter until mixture resembles coarse crumbs. Set aside.
In a large bowl, combine 2 cups flour, 3/4 cup sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Crack an egg into a measuring cup and then fill add milk to make 1 cup. Stir in vanilla. Pour into crumb mixture and mix just until moistened. Spread into prepared pan. Sprinkle top with streusel.
Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.Just in time for Sunday morning! A simple coffee cake is whipped together by first making a crumb mixture, and then stirring in milk and egg. It gets covered with a streusel topping and baked."

Cofee-coffee Cake;
2 c flour
1 c sugar

5 tlbsp melted butter
1 c milk
1 egg beaten
1tsp vanilla
1/2 c crushed cornflakes
2 tlbsp sugar
1/2 tsp cinnamon
Mix and sift first 5 ingredients,combine 3 tlbsp of butter,milk, beaten egg and vanilla,stir into dry ingredients until blended,pour into greased 8 in square pan,combine cornflakes crumbs and remaining 2 tlbsp butter,2tlbsp sugar and cinnamon and mix well,scatter evenly over batter in pan, and pat down,bake at 350 for 45 minutes or until done, serve warm.

The coffee cake i know doesnt have coffee in it at all.
They called it coffee cake because you eat it with coffee.

There is one on the back of the Bisquick box, I love it!
Its just a cake with brown sugar crumble on top

1/2 cup post Grape Nuts cereal
1/2 cup sugar
2 teaspoons instant coffee
1 3/4 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup sour cream
1/2 cup butter, softened
2 large eggs
1/2 teaspoon vanilla
EASY COFFEE GLAZE
2 tablespoons cold brewed coffee
1 1/2 cups powdered sugar

mix cereal with 1/2 cup sugar, the instant coffee and cinnamon.set aside.
mix flour with 1 cup sugar, baking soda, baking powder and salt in large mixer bowl.
add sour cream, butter, eggs, and vanilla.
blend at low speed of electric mixer, then beat 1 minute at medium speed.
spread one third of the batter in a greased 8" square baking pan.
sprinkle with half of the cereal mixture.
repeat layers and top with remaining batter.
bake at 350* for 45-50 minutes, or until cake tester comes out clean.
cool in pan.spread with easy coffee glaze.
to prepare glaze:.
gradually blend 2 tbls cooled brewed coffee into 1 1/2 cups powdered sugar.till smooth.
makes enough to glaze top of 8"-9" square of 10" tube pan.

I have my mom's red and white BH&G cookbook from the early 60's. If that rings a bell.
