There is only a substitute for making baking powder.

Baking Powder: 1/4 teaspoon of baking soda plus 1/2 teaspoon of cream of tartar equals 1 teaspoon of baking powder

baking soda is a leaving agent it reacts with acids in batter such as honey, buttermilk, chocolate, and jucies. if you need more leavening use of baking powder is suggested. baking powder is a mixture of baking soda and the acid for it to mix with it is used if the acid is not already present. If you just dont have soda, baking powder can be used but use less becausae too much will cause too much can cause a bad flavor and an undesirable light crumbly texture they will also not hold there shape. also baking ammonia can be used but this should only be used in small products that are cooked dry to ensure all ammonia gas is cooked off

proportion: to substitute 1 tsp. of baking power you can use 1/4 tsp. of baking soda with 5/8 tsp. of cream of tartar.

baking powder - it just doesn't take as much because its alot stronger than the soda!!
