INGREDIENTS


350g eye fillet steak, sliced into minute steaks*
2 tablespoons Dijon mustard
1 tablespoon olive oil
2 bacon rashers, chopped
1 small onion, finely chopped
1 clove garlic, chopped
4 mushrooms, sliced
¼ cup beef stock
2 tablespoons port
2 fresh tomatoes, chopped
2 tablespoons brandy




METHOD


Smother steaks with the mustard.

Heat oil in a frying pan. Add bacon and onions. Cook until bacon is browned. Add garlic and cook a further 30 seconds.

Add steaks and cook for 2 minutes, turning once. Remove and set aside, covered with alfoil, to rest.

Add mushrooms, stock tomatoes and port. Cook for 2 minutes until the tomatoes soften.

Pour in the brandy and set alight. When the flames die down, return the meat and coat with the mixture.

Serve immediately on a bed of wilted spinach or steamed green beans.

Slice into about 70-80g pieces
