Wrap bacon around pineapple or waterchestnuts, fasten with a toothpick. Stick under the broiler to cook. It just takes a few minutes, so you need to keep an eye on them. Pull out of the over, and put on a platter. They're great and the toothpick is there for people to use to grab. No utensils to wash or throw away.

Shrimp cocktail.

Bring a medium sized pot with a couple inches of water to a boil. Add one bag of frozen peeled, deveined with the tail on shrimp (the 16-15 or 21-30 count bags-smaller shrimp just aren't worth the effort) to the boiling water.

Boil shrimp for about two minutes or, remove them as soon as they turn pink, and submerge them in a bowl of ice water.

Set aside.

Slice a couple lemons and limes and use them to line the sides of a pretty and large glass bowl then pour crushed ice into the bowl, careful to keep the slices showing through the glass. Fill about three quarters of the way up the bowl. Place a small glass bowl, filled with cocktail sauce, in the center of the ice and place all the cooked shrimp on the remaining ice. Squeeze some fresh lemon over the shrimp and scatter some lemon and lime wedges around.

This is finger food that everyone likes and everyone is always impressed with, I don't know why, but I get the same reaction each time I serve this.

take a tortilla, spread flavored cream cheese to the edges (I like garlic and onion but veggie or chive work well too, any savory flavor) then put a layer of good lunch meat like deli ham or roast beef or turkey on it leaving a 1/4 inch space around the edge open. Then put a veggie down one end, 1 green onion, green stuffed olives, dill pickle whatever... then start rolling the tortilla from that end to the other adding more veggie as the tortilla gets bigger so that you have a nice straight row of veg right down the middle. cut off the uneven ends, then slice into rounds and put on plate, the cream cheese border should act like a glue to hold it together. You can make a variety of these, another good version is cream cheese, seafood sauce and flake crab or shrimp.

Quick-N-Easy Party Bites

1 lb. Ground Beef
1 lb. Velveeta Cheese
1 lb. Sausage
1 loaf Party Rye Bread

Brown beef and sausage together. Drain. Add Velveeta cheese and stir until cheese is melted. Spread on slices of party rye. Bake at 350 degrees for 10 minutes.

Lay out slices of either dried beef (very thin and salty) or thin slices of ham. Thinly spread neufchatel or cream cheese on the meat. Very thin. Roll up and put in refrigerator for 30 minutes until chilled. Take out and slice in 3/4" rounds. Very good.

You can also put chopped olives or chopped jalapenos in the cream cheese for a little different flavor or sprinkle on some finely chopped nuts. Guaranteed to be delicious.

Pizza Dip

Take a block of cream cheese - mix it with some italian seasoning and layer on the bottom of a dish
Take a can or jar of pizza sauce and pour it on top of the cream cheese
then sprinkle mozzerella or parmesan on top - throw in the microwave until melted
Serve with crusty bread
YUM!
