According to my understanding, God gave mankind "free will", the ability to make choices in any circumstance. God does "know everything" this is called omniscient. He knows all the permutations of all the choices that all of humanity may make, but he does not know which choices that mankind will actually make. This means that God has prepared a plan with every contingency for all of the choices to eventually get mankind to the place where he intends for it to be. God was not pleased with the choices mankind had made and so he decided to destroy all but Noah and his family and let mankind start over. This is slightly different from saying that God made a mistake.

We have a free will and God knows what we are going to do. The bible says God knows all. We may not get it but it doesn't mean that just because my brains to small to understand the ways of god that it isn't true.
