Ever made yorkshire pudding? It's exactly the same, but thinner (ie more milk & water). If not, here's a basic recipe: Mugful of plain flour, bit of salt (about size of 1p in the palm of your hand) 1 egg. Break egg into flour & add salt. Add a bit of water and beat hard until you have a thick batter. Then add some milk and keep beating and adding milk or water until you have a thin batter with no lumps! Quick and simple. (Save us a bit of cod, not had any decent cod in ages!).

Classic Fish and Chips
INGREDIENTS
4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk
1 egg
1 quart vegetable oil for frying
1 1/2 pounds cod fillets
DIRECTIONS
Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
Fry the potatoes again for 1 to 2 minutes for added crispness.

Long John Silver's Fish Batter
Mom got this recipe from somewhere a long time ago and passed it on to me. Just multiply the amounts according to how much fish that you have to fry.
4-6 servings
time to make 5 min 5 min prep
3/4 cup flour
2 tablespoons cornstarch
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup water
1. Sift dry ingredients.
2. Add water and mix well.
3. Use to coat fish or chicken filets.
4. Cover the fish completely.
5. Deep fry until a nice golden brown.

basic fish batter recipe
4 oz (110 g) self-raising flour
½ teaspoon salt
5 fl oz (150 ml) water, plus 1 scant tablespoon
Just sift the flour and salt into a mixing bowl, then gradually add the water, whisking continuously until the batter is smooth and free from lumps.

mix egg and milk. add pinch salt and some PLAIN flour till mix is like thick cream, leave for a while to stand, mix again then flour the fish, cover with batter then deep fry.
If you want a fluffier batter, use sparkling mineral water instead of the milk

Just mix some saesons with a bit of flour, and add milk or water to desired consitancy, then season to taste. Dip fish in and fry, if desired you may dip in bread crumbs after batter and before frying to get a little crispness! Hope this helps!! Good luck!!
