Anyone who has spent time working on such a project like the one you are wanting, would not part with the data ,collected after a lot of hard work. They would naturally do the project !
You cannot have the ready-baked cake and eat it too!

One such project I know and I know other people who are successful. Be ready to sepnd some time for it. and low seed capital.

You can not get these deatls from big guys. Try some small food product company, interview the owner and you will get some lead.
