SOUTHERN SWEET POTATO PIE

Preparation time: 50-60 minutes. 1 3/4 c. mashed sweet potatoes 4 tbsp. butter, melted 1/2 tsp. powdered allspice 1/8 tsp. salt 3 tbsp. brown sugar 1 tbsp. flour 1/3 c. honey 1 tsp. vanilla 2 eggs well beaten (egg beater may be used) 1 c. evaporated milk
Preheat oven to 400 degrees. Mix potatoes with butter and dry ingredients well. Add the eggs and evaporated milk. Pour into pie shell with cookie sheet under it and fill it almost all the way up. Bake for 35-40 minutes more.
Sweet Potato Pie should be set when done, just like a pumpkin or squash pie. Can be served warm or cold and with or without whipped topping. Serves 6-8.

I too hate marshmallows on sweet potatoes.
Sweet Potato Casserole
3 cups mashed Sweet potatoes1 cup Sugar
1/2 stick Margarine1/2 tsp. Salt
3 Eggs, slightly beaten1 tbs. Vanilla
Mix all ingredients well. Pour into casserole dish.
Topping:
1 cup Brown Sugar
1 cup chopped Nuts
1/2 cup self-rising flour
1/2 cup Margarine
1 cup Coconut
Mix topping till crumbly. Sprinkle topping potato mixture. Bake at 350 degrees for 30 to 45 minutes. Freezes well before or after cooking.
Sweet Potato Pie
3 tbs. All-purpose Flour
1 2/3 cup Sugar
1 cup mashed Sweet Potatoes
2 Eggs
1/4 cup light Corn Syrup
1/2 cup Butter or Margarine
3/4 cup Evaporated Milk
1/4 tsp. ground Nutmeg
1 unbaked Pie Crust
Preheat oven to 350 degrees. In a large bowl, combine the flower and sugar. Add all ingredients and pour into unbaked pie crust. Bake for 55-60 minutes.

OCIE'S ME OH MY SWEET POTATO PIE
2 cups cooked and mashed sweet potatoes
2 tablespoons melted butter
1/2 teaspoon vanilla
2/3 cup sugar
1/3 teaspoon salt
3 eggs
1/2 teaspoon cinnamon
1/2 cup cream
2 tablespoons brandy (optional)
1 unbaked pie shell
Preheat oven to 450°F.
Prick pie shell dough with fork before baking. Bake for about 10 minutes without filling.
Combine all ingredients in any order. Mix well with an electric hand mixer until all ingredients are smooth.
Pour filling into precooked pie shell and put into oven on 450 degrees for 10 minutes. Then reduce heat to 350 degrees and continue cooking for 35 minutes.
Serve warm with whipped topping or ice cream. Can also serve cold.
Enjoy! Serves 8-10

this is from the Fannie Farmer cookbook.
2 cups mashed cooked sweet potatoes
2 eggs, well beaten
1 1/4 cups of milk
3/4 cup sugar
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2 tbs rum*
4 tbs butter, melted
Preheat oven to 425 F. Combine ingredients in a large bowl and beat until smooth and well blended. Pour into unbaked pie shell 9". Bake for 10 min, then reduce heat to 300 F and bake for about 50 min more or until the filling is firm.
You can use rum flavoring instead. Look near the vanilla extract in your local store.

Go to www.recipes.com, they have some great sweet potato pie recipes. I've tried a few, they are all pretty good. My sister in law made the best sweet potato pies ever, but she passed away 2 1/2 years ago, and I never got her recipe. Hope that web site helps, also browse the net...there are lots of recipe sites.

I have my recipe at home, im at work too. Its my moms recipe and its great.
Chante is right extracting the fibers is key, but what makes my moms sweet potato pie soo good is condensed milk and butter. Oh and a homemade, not store bought crust
She has to make 8-10 pies for thanksgiving

this is my grans recipe ive been using it for 40 years you take 1/2 stick butter and 2 cups brown sugar 1 can evaporate milk 1 tbsp vanilla 3 eggs and 2 cups mashed sweet potatoes and 1 tbsp cinnamon and 1 tsp nutmeg....mix all of this together and pour in 2 unbaked pie shellsand bake at 350 on the middle shelf for about 1 hr or til it sets it will take an hr for sure.....oh yeah i always forget the evap milk is the tiny one it about 3/4 cup.......

the secret to sweet potato pie is to strain the sweet potato. The fibers make the texture wrong. I don't have a recipe right now (at work) but that's the trick to the pie.
