Butter Cake

"This cake is practical and can be for many uses. You can also add fruit in it if you wish."
INGREDIENTS:
190 g all-purpose flour
3 g salt
9 g baking powder
115 g butter
200 g white sugar
2 eggs
5 ml vanilla extract
180 ml milk
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 8
inch square baking pan. Line bottom with wax paper or dust lightly
with flour.
2. Sift together the flour, salt, and baking powder.
3. Cream the butter and blend in the white sugar, eggs, and vanilla.
Beat until light and fluffy. Add the sifted dry ingredients to the
creamed mixture alternately with the milk. Stir until just blended
. Pour batter into prepared pan.
4. Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes or until
cake springs back when lightly touched. Remove from pan and allow
it to cool.
5. Variation: Blueberry Cake; Add 1/4 teaspoon nutmeg to your dry
ingredients and stir in 1 cup fresh blueberries into the batter before
you bake it. Cut it into squares while it is still hot.

Basic White Cake, 2and a half c. flour, 1andhalfc. sugar, 3teaspoons baking powder, 1tsp salt,half cup soft butter, 2thirds c.milk,1tsp vanilla, 2 eggs, 1 third c.milk. Mix first 7 ingredients then add 2 eggs third c. milk mix well pour into greased floured 9 by 13 pan .Bake at 350 degrees 30 to 35 min let cool.

Quick Yellow Cake
2 cups flour
1 1/3 cups sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening
1 cup milk
2 teaspoons vanilla
2 eggs
Heat oven to 350*.
Mix dry ingredients in lg bowl.
Add shortening, milk and vanilla.
Beat on med for 2 minutes.
Add eggs and beat for 30 seconds more.
Bake in greased 13x9 pan for 35 minutes, or until pick comes out clean.
Yellow Cake
2 cups flour
1 1/2 cups sugar
1/4 cup shortening
1/4 cup butter, softened
1 cup milk
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
3 eggs
Heat oven to 350 degrees F.
Grease and flour 13x9x2-inch pan.
Beat all ingredients on low speed, scraping sides, 30 seconds.
Beat on high 3 minutes.
Pour into pans.
Bake the 13x9-inch pan 40-45 minutes, or until toothpick inserted in center comes out clean.
Cool 10 minutes, remove from pan; cool completely.

Easy way to make cake, buy a box cake mix that says "just add water", but use a can of soda instead, it makes it taste unique and good at the same time. Just use any kind of soda it works, trust me. Stick it in the oven and check on it often buy sticking a knife or a toothpick in the center each time, if it's still gooey leave it in longer, but if the knife and the toothpick are still clean it's done and take it out. SIMPLE APPLE CAKE
3 eggs
1 c. oil
1 tsp. soda
1 1/2 tsp. cinnamon
1 c. nuts, chopped
2 c. sugar
2 c. flour
1/2 tsp. salt
4 c. apples, chopped
Beat eggs, add sugar and beat until thickened. Add oil, mix well. Sift dry ingredients and mix well. Stir in apples and nuts. Place in greased and floured 9 x 13 inch pan. Sprinkle with sugar and cinnamon. Bake 50 minutes at 350 degrees.
SIMPLE STRAWBERRY CAKE
2 cups all-purpose flour
1/2 tsp. soda
1/2 tsp. salt
3 eggs
1 c. vegetable oil
1 c. sugar
1 (3 oz.) pkg. strawberry gelatin
1/2 c. buttermilk
1 (10 oz.) pkg. frozen strawberries, thawed
Preheat oven to 350 degrees. Grease and flour 2 (8") round cake pans. Combine flour, salt and soda; set aside.
Beat eggs in large mixing bowl. Add oil, sugar, gelatin and buttermilk, stir vigorously until well blended. Add flour mixture and blend well. Drain 1/2 cup juice from strawberries, reserve for strawberry icing. Fold berries into batter. Pour batter into pans. Bake for 25 to 30 minutes or until golden brown. Remove from oven. Cool 5 minutes; turn out of pan onto rack and cool completely.
STRAWBERRY ICING: Combine 1/4 cup butter, softened and 1 pound confectioners' sugar; add 1/3 to 1/2 cup strawberry juice until desired spreading consistency. Beat until creamy.
SIMPLE WHITE CAKE
1/2 c. shortening
1 tsp. vanilla
1 1/2 c. sugar
2 1/4 c. sifted flour or 2 1/4 c. sifted cake flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1 c. milk
3 egg whites
Mix and bake in greased and floured cake pans at 350 degrees until it bounces back in the middle.
CARAMEL FILLING:
1 c. sweet milk
3 c. sugar
1/2 c. butter
1 tsp. vanilla
1/4 c. brown sugar
1/4 c. boiling water
Add boiling water and brown sugar; cook until sugar and boiling water is well blended and all lumps are gone. Put all ingredients in large boiler. Cook until it leaves the spoon. Set in cold water beating until it becomes creamy and thick.
