I have three people coming over and they are really difficult (all male)... what should I make for them?

Steak Sandwich

1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound

1/2 t. coarsely ground black pepper

Salt to taste

2-3 T. oil

2 T. chopped onion

4 oz. crimini mushrooms, cleaned and chopped

1/2 t. thyme

1 loaf French or Italian bread, or 1 Vienna loaf

3-4 T. prepared mustard

Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.

Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them.

Men usually like meals that fill. I would either bake them a whole chicken with some garlic and seasonings added. With some baked potatoes. Or make them a meat loaf with mash potatoes and gravy. Then have some corn on the cob, or corn bread. For a side dish, green beans cooked with cream of mushroom sauce and onions. We usually cook chicken this way, cut up the pieces of chicken, and remove the skin. Chop up some garlic and onions, then brown the onions, garlic, and
chicken in a pot. Now add two tablespoons of vinegar a half cup of soy sauce { if it is a whole chicken } , a half cup of water, and a teaspoon of cayenne pepper for taste, to chicken. Boil the chicken for about 15 minutes or until desired tenderness. Taste if salty enough, if not add only a drop of soy sauce, but really it should be enough. Pour the chicken in a nice dish and serve with White rice, cooked of course. A side dish of corn or salad might go well. This is so tender and good. I hope it works for you. I even add some medium cut pieces of potatoes in the pot of chicken around the ten minute time, it goes well with the chicken, just dont let the potatoes over cook.

Males that are difficult to feed?! That's a new one! I'll eat anything.

Make a rice or pasta dish - that way it's easy to serve a huge quantity so you won't run out.

I like the first guy's idea of shrimp, but fish is something that a lot of people don't like. Perhaps do a choice of meats - like a little beef, chicken, pork and some fish, so they can pick what they like the best.

Or - something I do with my friends is have a cheese and wine evening, where everyone brings some cheese that they like, along with something to go with it, like salad, or ham, or pickled onions, or a nice bread. That way everyone can try a bit of everything that the others have brought. Through in a few bottles of wine and you're sorted!

Why don't you try this recipe... It is pretty easy to make & it is a healty food & of course delicious!!! ;-)

::Campbell's® Cheesy Chicken & Rice Casserole::

Prep Time: 5 minutes
Bake Time: 45 minutes

Serves: 6

Ingredients:

1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup

1 1/3 cups water

3/4 cup uncooked regular long-grain white rice

2 cups fresh or frozen vegetables

1/2 tsp. onion powder

4 skinless, boneless chicken breast halves

1/2 cup shredded Cheddar cheese


Directions:

1. Stir the soup, water, rice, vegetables and onion powder in a 12 x 8” shallow baking dish.

2. Top with chicken. Season chicken as desired. Cover.

3. Bake at 375°F. for 45 min. or until done. Top with cheese.

*TIP: Italian: In place of onion powder, use 1 tsp. Italian seasoning. Substitute 1/3 cup shredded Parmesan for Cheddar.
Mexican: In place of onion powder, use 1 tsp. chili powder. Substitute Mexican cheese blend for Cheddar.

One of my all time favourites -

Coq-au-vin
(serves 5)

Ingredients -

12 chicken breasts
4 onions, finely diced
200g smoked bacon trimmings
1 litre red wine
200g flour
120ml oil
5-6 cloves garlic, chopped
1 bouquet garni, wrapped in leek leaves
2 litres veal stock
Salt and pepper

For the garnish
200g bacon lardons, blanched
200g button mushrooms
200g button onions, peeled and blanched
80ml oil
Chopped parsley

Method
Marinate the chicken breasts, onion and bacon for two hours in red wine. Drain and reserve the wine. Coat breasts (the chicken's, not yours) in flour, shake off any excess and fry in 80ml oil until golden brown. Caramelise the bacon and onion in a thick bottom pot with the rest of the oil, add the chicken, garlic, bouquet garni, wine and veal stock to the onion and bacon. Bring to the boil, skim and simmer for two hours. Remove the chicken breasts and pass the stock through a chinoise, then reduce to a glossy sauce. Adjust seasoning, pour over the breasts and reserve.

Fry the lardons, mushrooms and onions in oil and add to the chicken breasts. Garnish with parsley.

Note this recipe serves FIVE. I'll bring the wine. What time should I be there?

You could always do DIY pizzas. If you prepare the bases & tomato sauce, you could put lots of different toppings and cheeses into individual bowls, and have them top their own pizzas, that way they can't complain! I'd serve that with jacket potatoes, and you could do some baked beans and/or mini corn on the cobs. Good luck!

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

Make some Argentinian Steak with lots of Chimichuri sauce poured all over the meat. And make a side dish of sea salted new red potatoes. you can look up recipes online.
