I'm going to asume the coach is also female...?

Well there are a few approaches to this.

You can make it personal like a chain with a cheer pendant. Or even a nice jacket with Gym Logo on it.
or
Give her something to use in the gym, cheer related. equipment!
or
A gift Certificate to a restaurant, make it enough for a dinner for 2

This isn't too difficult really... the biggest mistake people make is buying something expensive that the person may not like or be able to use.... so keep it simple and practical.

I purchased this awesome trophy with a cheerleader on it had it personalized there was a space for a photograph so I had the squad sign it and placed that in the trophy frame.
The coach cried she was so touched by this "Huge" gift, in reality I spent $25.00 on it.

Take a good picture of the girls with their coach, place it in a bigger frame and have the girls sign around the picture saying thank you.
