Chocolate Mousse (traditional French style)
350g (12 oz) good quality dark chocolate *preferably at least 70% cocoa solids.
6 eggs, separated
30 ml (2 tablespoons) of the liqueur of your choice (cointreau, kirsch or baileys work well!

Melt the chocolate in a bain marie (a pan of gently simmering water, with a glass bowl on top - make sure it fits well, as you don't want any steam to get into your chocolate - it makes it go hard and split). Remove from heat, and beat in the yolks and then the liqueur, until it's at a smooth consistency. In another bowl, whip the egg whites, until they're stiff, and gently fold spoonfuls into the chocolate mixture. You can be quite vigourous in mixing in the first couple of spoonfuls, but after that, be careful and very gentle, as too much mixing will knock the air out of the egg whites. Pour into separate bowls, or 1 big serving dish, and refrigerate for 2-5 hours, when it should have set. You can decorate with whipped cream and flaked chocolate if desired, or just serve as is, or with langue de chat biscuits (cookies if you're American). This is a very luxurious, sumptuous, rich dessert, and I'd highly recommend it!

Impossible Hot Fudge Pudding Cake

Ingredients:
1 cup Bisquick
1/2 cup Milk
1 cup Sugar
3 tablespoons Unsweetened Cocoa Powder
1 2/3 cup Hot water
1/3 cup Unsweetened Cocoa Powder


Directions:

Preheat oven to 350 In a greased 8 square pan, mix Bisquick, half the sugar and 3 Tbsp cocoa powder. Stir in milk and vanilla until blended. Sprinkle evenly with remaining sugar and cocoa powder. Pour water over top. DO NOT STIR. Bake 40 minutes or until top is firm. Dust lightly with confectioner's sugar if desired.

Spoon into dessert bowls while hot. Tastes great with a scoop of vanilla ice cream or whipping cream on top.

Dirt Cake

Ingredients

1/2 stick softened margarine
1 pkg. 8 oz. cream cheese softened
1 cup powder sugar
3 1/2 c. milk
2 pkg. choc. pudding mix
1 12 oz. cool whip (thawed)
1 20 oz. pkg. Oreo cookies (crushed)

Cream marg., sugar, cream cheese. In another bowl mix milk and pudding. Let sit until thick. Stir cool whip, mix half with cream cheese mixture. Put 1/2 of cookie crumbs in bottom Add 1/2 of cream cheese mixture. Then add pudding, Repeat cream cheese mixture. Add whip topping and extra cookie crumbs on top (to look like dirt). refrigerate over night.

MAYONNAISE CHOCOLATE CAKE

2 c. flour
1 c. sugar
2 tsp. baking soda
4 tbsp. cocoa
1/4 tsp. salt
1 c. water
1 c. mayonnaise
1 tbsp. vanilla

Sift dry ingredients into a large bowl. Add the water and beat 1 minute. Add the mayonnaise and beat 1 minute. Add the vanilla and beat 1 minute.
Pour into a greased and floured pan, 13 x 9 inch square for a very high cake. Sprinkle with chopped nuts and chocolate bits for a dandy frosting. Bake at 350 degrees for 35-40 minutes.

HERE ARE SOME OF THE RECIPES I USE:

Kahlua Fantasy Choc. Cheesecake



----C----
1 1/3 cup choc. wafer crumbs
1/4 cup softened butter
1 tablespoon granulated sugar.

1 1/2 cup semi-sweet choc chips
1/4 cup kahlua
2 tablespoon butter
2 each large eggs
1/3 cup sugar
1 cup sour cream
16 oz cream cheese

Prepare crust. Press firmly in bottom of 9" springform pan. Prehat oven 350. In small saucepan melt choc. over medium heat with kahlua and butter. Stir until smooth. Set aside. In bowl combine eggs and sugar. Add sour cream and blend well. Add cream cheese to egg mixture; beat until smooth. Gradually blend in choc. mixture. Turn into prepared crust. Bake 40 minutes or until filling is barely set in center. Remove from oven and let stand at room temperature 1 hour. Then refrig. several hours or overnight.

Chocolate Dessert Ball



11 oz cream cheese, softened
3/4 cup chocolate chips, melted
1/4 cup creme de menthe
1/2 teaspoon cinnamon
1 1/2 cup coarsely chopped pecans

In a large bowl combine softened cream cheese, melted chocolate chips, liquer, and cinnamon. Blend until smooth. Chill at least 2 hours. Form into ball and roll in chopped nuts. Serve with chocolate wafer cookies. NOTE: I have also used Baileys or Kaluha instead of the creme de menthe. Very rich.

Mountain Momma Mud Slide



----1ST LAYER----
1 cup pecans; chopped
1 cup flour
1/2 cup butter; softened
----2ND LAYER----
1 cup confectioners' sugar
8 oz cream cheese; softened
1 cup cool whip; from large container
----3RD LAYER----
1 pkg instant vanilla pudding; small
1 pkg instant chocolate pudding; small
3 cup milk; cold
----4TH LAYER----
1 cool whip; remaining carton
1 grated chocolate
1 pecans

Mix together the ingredients in the 1st layer and press into 9x13-inch pan. Bake at 350~ for 20 minutes. Cool completely. Mix 2nd layer ingredients until nice and fluffy and spread over first layer. Mix ingredients in 3rd layer and spread over 2nd layer. Spread remaining cool whip over the top and sprinkle with grated Hershey bar and/or nuts. Chill at least 2 hours. Lisa's Chocolate Chocolate Chip Cake

INGREDIENTS
1 (18.25 ounce) package chocolate cake mix
1 (3.9 ounce) package instant chocolate pudding mix
1 cup vegetable oil
4 eggs
1/2 cup hot water
1 cup sour cream
1 teaspoon vanilla extract
1 cup mini semi-sweet chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt pan.
Combine cake mix, pudding mix, oil, eggs, water, sour cream, and vanilla. Beat until smooth. Stir in chocolate chips. Pour batter into prepared pan.
Bake for 1 hour. Allow to cool.

Bev's Chocolate Pie

INGREDIENTS
2 cups white sugar
5 tablespoons unsweetened cocoa powder
1/4 cup all-purpose flour
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract
4 egg yolks
1/4 cup butter
1 recipe pastry for a 9 inch single crust pie

4 egg whites
1/4 cup white sugar
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a saucepan, whisk together 2 cups sugar, cocoa and flour. Blend in evaporated milk and vanilla. Beat egg yolks, and stir into pan. Add the butter or margarine. Heat, stirring constantly just until butter is melted. Pour filling into unbaked pie shell.
Bake in preheated oven for 35 to 40 minutes, or until pie is not "wobbly" when shaken.
Beat egg whites until soft peaks form. Gradually add 1/4 cup sugar, beating constantly, until stiff peaks form. Spread meringue on pie.
Return pie to oven, and bake until meringue is golden.

INGREDIENTS
1 (19.8 ounce) package brownie mix
1 3/4 cups cold milk
2 (3.3 ounce) packages instant white chocolate pudding mix
4 teaspoons instant coffee granules
2 tablespoons warm water
2 cups frozen whipped topping, thawed
3 (1.4 ounce) bars chocolate covered toffee bars, chopped
DIRECTIONS
Prepare brownies according to package directions. Bake and cool completely. Cut into 1 inch cubes.
In a medium bowl, whisk together milk and pudding mix until mixture begins to thicken. Dissolve coffee granules in water and stir into pudding mixture. Fold in whipped topping.
In a glass serving bowl, layer one-third of brownie cubes, one-third of pudding mixture and one-third of candy. Repeat layering until all ingredients are used. Chill 30 minutes in refrigerator before serving.

Cookie Balls

INGREDIENTS
1 pound chocolate sandwich cookies, crushed
1 (8 ounce) package cream cheese, softened
1 pound vanilla-flavored candy coating, melted
DIRECTIONS
In a large mixing bowl, combine crushed cookies and cream cheese to form a stiff dough. Roll into balls and dip with a fork in melted candy coating. Let rest on waxed paper until set.
