If you don't have a specific breed in mind, and don't have anything in mind for the dog other that a companion you should check out some local shelter and rescues. They will have many good dogs looking for homes. These dogs will be fixed, and have current shots. Most of the time there is an adoption fee, but that will be a lot less than buying a pure breed from a breeder. If you do decide to go with a pure breed....make sure to go to a good reputible breeder. If you check out the AKC web site they will have a list of recommended breeders in your area. These dogs will be expensive, but you will know what you are getting. Family history and such....and dogs from a good breeder will be at less risk for health issues associated with the breed, for most breeders will try to weed these out.
As I said I would first start at some shelters and rescues.

Poodles are known for not shedding. There are several sizes. They do have energy, but are known for being easy to train.
Labs shed and have energy, but are often great all around family dogs.
A greyhound can be quiet, sheds a bit, and is laid back, but they do require special veterinary maintenance because of being strictly bred for racing.
A collie sheds alot, but they are quiet and on the mellow side.
Go to an animal shelter and look at the dogs. Notice which ones you like and dislike. Talk to the people working at the shelter and tell them exactly what you are looking for. It is so much easier for them to help find you a dog if they know exactly what you want.
If they don't have what you want that day, they will most likely have one very soon.

I'd first suggest the pound or humane society.
But as for breeds to look for, try an English Bulldog. They've got short hair, are the very definition of laid back, and don't bark often. They're also great with kids and if you've got the right motivation and food, easy to train.
There are also, airdale terriers, poodles, West Highland White Terriers, Golden Doodles, Labradoodles, and Chinese Crested. With these dogs you have very little shedding if any at all.
Check out your library or talk to a vet for more breed information.

Good to research your question first. I found that www.petfinder.com was great. They have dogs all over the US, in every town. These are all dogs that need homes. Some may be pure breed others are mixed. Not only is it important to know that you dont want a dog that sheds but to know you prefer a mellow dog is something that you can find in an individual dog as opposed to just looking at a breed. Dogs that are "fixed" definitely mellow out. On petfinder they describe the personalities of each dog in great detail, along with a description of their history and whether they get along in big families, other animals, etc.
Good luck on your search. I love my two dogs and couldnt imagine my life without them.

A King Doberman . They dont shed at all and are super clean and since they are like your shadow if you are laid back so will the dog and they only bark if provoked. I wouldnt have any other. They dont act like dogs they act almost human. They are super smart and are the only dog that knows how to reason. They actually think about stuff and know when something is right or wrong. I have two.

All dogs bark and shed...Some less than others but you aren't going to find one that doesn't at all...First decide if you really want a dog, considering that you will have to deal with hair and noise! I recently got a toy poodle because I have allergies and need a doggy that doesn't shed. I made an awesome choice. He very rarely barks and doesnt need a lot of room since he is only 6lbs. I highly recommend this breed!

I have 2 Maltese. They are supposed to be hypoallergenic and they don't shed. But one barks alot and the other doesn't at all so I don't know what is common for the breed.

I know you wont believe this but our rottwieler never barks. He growls every once in a while, but never barks. He's calm and loves children and he's so sweet. However, he does shed, but I've never had a dog that didnt.

I would go with a Staffordshire Terrier /Pit Bull Terrier. They do bark, but only for reasons. All dogs shed, but I would recommend this breed for their short hair. Pit Bulls and Staffies are DEFINATLY laid back!
