::Prawn & Corn Fritter::

Ingredients:

1 cup small size soft skin prawns, discard head tail and clean
3 cups all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon bicarbonate of soda
1 cup bean sprouts
1/2 cup leeks, cut into 2 cm
1 onion, thinly slice
1 red chili, thinly slice
1/2 cup corn, kernal
1 cup water, or more
oil (for frying)

Method:

1- Combine all ingredients and a cup of warm water.

2- Mix thorougly with a spoon until all ingredients are really combine (about 1 minute).

3- If the mixture is too thick add more water.

4- The mixture should be thick enough in order to spoon it into hot oil for deep frying.

5- Deep fry until golden brown.

6- Best serve hot with sweet chilli sauce, satay sauce or ketchup.

If you like spicy food, you may try to prepare this famous Thai soup, Tom Yam Kung (Spicy & sour prawns soup)

20 prawns (shrimp),medium size
4-5 cups water
3 shallots, finely chopped
2 stalks lemon grass, lightly pounded, cut into 1 inch long segmets
2 table spoon fish sauce
2 slices fresh/ dried galanga root
20 small mushroom, halved/ whole
6 kaffir lime leaves
3 table spoons lime juice
2-3 chillies, cut small coriander leaves and spring onion cut five

1.Wash the prawns and shell them without removing the tails.
2.Heat water in a pot over medium heat, bring to boil.
3.Add the shallots, lemon grass, fish sauce and galanga root, boil for 3 minutes.
4.Add the prawns and mushrooms, cook until the prawns turn pink.
5.Add the kaffir lime leaves, lime juice and chillies, bring to boil then remove from heat.
6.Sprinkled with coriander leaves and chopped spring onion and serve hot.

Prawn & Potato. Sauce made more of small chillies,vinegar, abit of salt.. Realy tasty & hot!! give a try!

cOOK THE FISH IN WATER:ADD SALT HOT PEPPER ONIONS CARROTS ETC:THEN COOK NOODLES IN IT .
