KARE-KARE
(Oxtail in Rich Peanut Sauce)
Ingredients:
½ kg or 2 cups Buntot ng baka (oxtail), cleaned and cut into serving pieces
200 g or 1 cup eggplant, cut diagonally into 1” length
100 g or 1 cup sitaw (long green beans), cut into 2” length
100 g or 1 bundle pechay or kangkong
3 g or 1 tsp. garlic, crushed
60 g or 1 pc onion, sliced
57 g MAMA SITA’S KARE-KARE (PEANUT SAUCE) MIX
15 ml or 1 tbsp cooking oil
50 g ½ cu bagoong alamang (sauteed shrimp fry)
Procedure:
1. Boil oxtail in 8 cups water and simmer until meat is tender, leaving about 1 ½ cups stock. Set aside.
2. Saute garlic and onion. Add oxtail. Dissolve Mama Sita’s Kare-Kare (Peanut Sauce) Mix in 1 cup stock and add. Add remaining stock. Stir and simmer for 2 minutes.
3. Add eggplant and “sitaw”. Simmer for 3 minutes. Stir once in a while to avoid sticking of the sauce to the pan.
4. Add pechay and simmer for 2 minutes or shorter if kangkong is used.
5. Serve with bagoong alamang.
CHICKEN ADOBO
Ingredients:
1 kg (2.2 lbs) Chicken, cut into serving pieces
50 g (1 pouch) Mama Sita’s Adobo (Savory Sauce) Mix
¼ cup water
Procedure:
1. Fry the chicken in a little oil until golden brown.
2. Dissolve Mama Sita’s Adobo (Savory Sauce) Mix in water. Add dissolved adobo mix to browned chicken cutlets.
3. Cover, boil and simmer. Stir once in a while until sauce thickens and meat is tender
