the orginal way was to cut dices of the meat about 1 inch cubes this was goat meat and it was brushed with olive oil and spices and cooked on a open fire after be put on skewers.......we have taken it and added veggies to the meats for a change in its orginal state......

In the better places, the meat is cut into slabs and marinated. After a specific amount of time, usually over night, the meat is then skewered in overlapping layers.

In the other places, the meat is chunked/shredded, marinated, and then pressed into slabs which are skewered in overlapping layers.

they cut the meats in circles..and then they slwoly put it layer by layer on the metal..then wrap it up in cling film tightly so that it stay fresh, they put it in the firdge...its made from proper meat...and it is healthy bbc did a documentary on it and visited facotories...they said it was healthy..also its a TURKISH food not greek...greeks just like to take turkish food and make it theirs coz they dont know anything..hope it helps
