VEGETARIAN NUTS CRUMBLE
Ingredients

1 cup brown rice
2-1/2 cups vegetable stock
3/4 cup whole wheat breadcrumbs
1/3 cup chopped walnuts
1/3 cup chopped pecans
1/3 cup chopped almonds
2 Tbsps. fresh parsley, chopped
2 Tbsps. unsalted butter, melted
1 egg, lightly beaten
2 Tbsps. unsalted butter
1 small onion\cooked, chopped
1 red bell pepper\cooked, seeded and chopped
1/4 lb. broccoli, chopped
1/4 lb. cauliflower, chopped
1/4 lb. mushrooms\cooked, sliced
1 lb. canned chopped tomatoes
1 Tbsp. plus 1 tsp. fresh parsley, chopped
1/2 tsp. Italian herb seasoning
1 cup cheddar cheese\grated, grated

Instructions

Preheat oven to temperature 400°F. Combine brown rice, stock and salt to taste in a heavy saucepan. Bring to a boil over medium high heat. Boil 5 minutes. Lower heat as low as possible. Cover pan tightly and let rice simmer 45 minutes without lifting lid. After 45 minutes, turn off the heat, and let stand covered 10 minutes.

While rice is cooking, combine next 5 ingredients in a bowl. Stir in melted butter and set aside. Drain rice. Rinse under cold running water and drain well. Return rice to pan. Stir in beaten egg and mix thoroughly. Spread rice mixture evenly in the bottom of a buttered ovenproof dish. Melt remaining butter in a large heavy nonstick skillet over medium high heat. Sauté onion 3-4 minutes, stirring frequently until softened. Stir in remaining ingredients, except cheese, and bring to a boil. Reduce heat to low, cover and simmer 3-4 minutes until vegetables are almost tender. Pour vegetables over rice. Sprinkle cheese over vegetables and top with nut mixture. Bake 20 minutes.

Eggnog Cream Puffs

1 cup water
1/2 cup butter or margarine
1 cup all purpose flour
4 eggs
eggnog cream (below)
powdered sugar

Heat oven to 400F. Heat water and butter to rolling boil in 2-1/2 qt saucepan. Stir in flour. Stir vigorously over low heat about 1 minute or until mixture forms a ball; remove from heat. Beat in eggs, all at once; continue beating until smooth.

Drop dough by scant 1/4 cupfuls about 3 inches apart onto ungreased cookie sheet. Bake 35-40 minutes or until puffed and golden. Cool away from draft.

Cut off tops of puffs; pull out any soft dough. Fill puffs with Eggnog Cream; replace tops. Sprinkle with powdered sugar. Serve immediately. Store covered in refrigerator.

Makes 10-12 creampuffs.

Eggnog Cream:
1 pkg (4 serving size) vanilla instant pudding and pie filling mix
1 cup milk
1 tsp ground nutmeg
1 tsp rum extract
1/4 tsp ground ginger
2 cups whipping (heavy) cream

Beat all ingredients except cream in large bowl with electric mixer on low speed, for 1-2 minutes or until smooth. Add cream. Beat on high speed 1-2 minutes or until soft peaks form.

You could also try looking at http://www.bbc.co.uk/food/vegetarian_and_vegan/simonrimmer.shtml which has a selection of recipes from the author of The Accidental Vegetarian. I used to be vegetarian so had several years of Christmas dinners and always preferred something such as a rice, nut and vegetable loaf or spinach filo pie that I could have alongside all the traditional roast vegetables because then I didn't feel like I was having anything too different from anyone else. Good question.. You never know when somebody might turn queer (veggie) or vegan.

Good excuse to add almonds to the turkey plus trimmings, just in case and include a few veggies sausages.

I would go for Lentil Croquettes with the bird of choice. More difficult to cater for are the people who only eat wild foods, which means fish or mushrooms, or wild duck, pigeons, venison (a bit easier with the Farmer's Markets). .

We find the Christmas dinner the easiest to do as veggies. People seen to thing that a "central" item is needed, such as a nutroast or somethng.

Why bother ? The Christmas dinner is full of great winter vegetables, why do we all need to have a focal point.

Stuffed Mushrooms to Start (Big flat mushrooms filled with garlic,chopped up mushroom and cream topped with breadcrumbs).

Nut Roast with a fresh tomato sauce, with roast potatoes, roast parsnip, and all the trimmings for main.

Chocolate pudding with white custard for desert.

your first main should be brandy
make your second main amarretto
and finishoff with a 12 pack of budwieser

All alcohol comes from plants

By the time you're done all that youl forget that your avegetarian and get a decent meal with meat in it

start with xamtoes
and xcumbers
put them in the shape of an xree
put xtalian xauce on them and stir
put a xam on the oven and bake it
bake xurkey too
and have some xudding for desert.
