::Homemade Gravy::
Ingredients:
juices from cooked meat
2 tablespoons flour (heaping tablespoons)
water or vegetable stock
1 dash red wine
1 tablespoon red currant jelly
salt and pepper
Method:
1- Add flour to juices from cooked meat and mix for approximately 1 minute.
2- Stir in the water or stock and stir well to prevent lumps.
3- Add wine, jelly, salt and pepper to taste.

::KFC Gravy::
Ingredients:
1 1/2 tablespoons Butter shortening, melted
3 tablespoons of original breading flour
2 tablespoons all-purpose flour
1 can campbell condensed chicken stock
1 can water
Method:
1- First we are going to make a roux with the melted shortening (butter) and 1 1/2 tablespoon of *breading flour.
2- Cook this over low heat for 10 to 15 minutes or until the roux browns in color to resemble a nice milk chocolate color.
3- Once the mixture turns brown remove it from the heat and add the remaining flour stiring to make a paste. Slowly add the liquid (s) whisking together the paste and liquid.
4- Bring the mixture to a boil and boil for 2 minutes reduce the heat and allow the mixture to thicken which should take about 3 to 5 minutes. Stiring constantaly. Mixture will burn if left unattended.
5- *That is just the flour that you use to bread the chicken with.
p/s: I'd recommended recipe #2 (KFC Gravy) coz it is so simple to make & how close it tastes like to the original KFC gravy... Try it yourself...

Southern Brown Gravy
1/4 c. vegetable oil
1/4 c. flour
1 cup milk
1 cup water
Salt and Pepper
Place oil in frying pan on medium heat. Add flour and stir constantly until a rich brown. Remove from heat and carefully and slowly add water and milk stirring constantly. Add salt and pepper to taste. Return to heat and bring to boil. Reduce heat and cook until desired consistency. Add more water if gravy becomes too thick.
Meat broth may be used in place of water and milk.

if you have no gravy packets ($0.33 each at walmart)
you can make cream/milk gravy or country gravy.
2 cups milk, warm on stovetop, thicken with a mixture of 1/2 oil, 1/2 flour (roux), as it gets close to boiling, it will thicken.
4-6T of roux should be enough for that amount of liquid.
season to taste with salt & pepper.
for country gravy, brown the flour/oil mixture first then add the milk.

I use the pan dripping from the meat, add a can of mushroom soup and a package of onion soup, mix it with potato water and gravy browing to thicken it up. I then drain all the fat off...and damn it is good.

The sell by date is the date that the store has to sell the meat. That means the meat should be safe refrigerated for several days past the sell by date. If you really want to be safe, just cook it tomorrow. It will be fine. By no means should you throw it away and it isn't worth getting out of bed at 3 am either. Sounds like a good meal he will be eating!

in roasting tin, add 2 oxo cubes, and the water from your boiled vegtables - have over the heat, and gradually add self raising flour until the gravy is thick
