I'm talking about turkey of course. Talking to my mother in law on the week end she stuffs. I don't just because of my knowledge as a chef about all the nasty stuff that can happen. Are there any sutffers here?

i think is one own opinion now when i worked in resturant that stuffing was a nono as for the food borne illness. and you not talking 3 to 4 people......could be as many as 500..and that sure would get someones attention....as for when i cook for my family i know that i practice safe sanatation proceedures and there is no risk as long as the proper temps are adhered to...it just a family thing as i grew up where my grandmother always stuffed the bird and she owned he own resturant for over 45 years....even now i think how she did some of the things in her resturant and no one ever got sick ,,,,she always stuffed the birds there for meals....and banquets....alot of years now i like making dressing seperat as i love oyster dressing and my daughter like sage and my son cornbread...so it would now have to be 3 birds if stuffed.....oven space sometimes present a problem but this year i bought a turkey fryer and going to try deep fat frying one ...i have a roaster and that works well........but to boil it all down to the last fact is proper sanitation proceedures beig adhered too....

Yes. And when done correctly, it's quite simple. Adds wonderful flavor to the turkey and vice versa.

well normally you wash your hands and cook the turkey, so that takes care of the saminella problem

Hell, yeah, I LOVE to stuff. Especially in this dish I make, called "Primavera Salmonella".

No way-it's gross to think of stuffing ala salmonella.
