We're having our night alone together, the fiance' and I... and its been a while since... so Im cooking for her and well... yeah.. =)

Okay - best romantic dinner, and recipe.. ten points for best answer... =) Looking for a roast or possibly steak?? Or somethin else if you can top it off...

I'd probably start off with a light garden salad, maybe a small bowl of soup as well, whatever flavors you enjoy most. For dinner, I'd suggest a beef tenderloin medallion/steak, they cut like butter even if you happen to overcook it too much. Just put some good old salt and pepper and cook it, then make a pan gravy by sauteing some onions and mushrooms, then make a roux by adding flour, then deglaze the pan by using some wine, or just beef broth will do. Then for desert, perhaps some sort of fruit pie, along with a can of whipped cream, if you get my drift.

Romantic dinners are all about tastes and textures. Getting that mouth involved is the key.

A roast or a steak is okay, but I'd rather use thinly sliced meat and combine it with other things. The idea is not to "chow down", the idea is to open the ball for an evening of romance. Don't over-stuff your sweetie with a big heavy meal.

How about a small portion of pasta in an alfredo sauce with thinly sliced steak? Add some slivers of almonds and maybe even just a bit of tomato.
Have a light green salad with just a few mandarin orange slices, raisins, pecans topped with a vinaigrette dressing (just a dash).
Strawberries dipped in chocolate for dessert.
If I were serving this .. it'd be a barely chilled red wine, kinda light.
I'd have an extra bottle of wine ready in case it's going really really well....

The theme is lots of tastes and textures, all very light and tasty, and easy to chew around so you can chat.

Candles are a must ..but don't just put one or two on the table ... light the whole room with lots of candles.

And keep it informal. It's not a big deal, just a chance to get together for good food as an overture for romance!

Some people suggested Pasta and I have to disagree with that. Given that this is your fiance I'm guessing you have..let's just say activities in mind for later in the night. Pasta is a bad idea in this case as it is very filling and can weigh you down. Go with a simple Beef Roast. I hope you don't take your beef well done cause that's just wrong. So here's how you do it. I like to sear my roasts first, you can either fry it in some oil or even grill it. After you're done that put it in a roasting pan, toss some Onions in the pan with a little bit of garlic, water and if you're serving wine that night, pour a little of that in there too, not too much, I'd say 2 cups of water and then 1/2 cup wine. Put that in the oven, now, peel some potatoes and after the roast has been in for about 10 minutes, put the potatoes in the pan too. When the potatoes are done, so is your roast. If by chance you are an evil person and take you beef well done, wait an additional 15 minutes before you put the potatoes in. Let the beef sit for 10 minutes before you cut it. While it rest put the potatoes in something and cover them cause who likes cold potatoes??? Make a gravy out of what's left in the pan and if you cut the onion small enough you can leave them in, otherwise get them out. Serve with a salad and my suggestion is for dessert, just bring in a can of whipped cream. It's the perfect way to end a meal.

What about something simple...
Shiskebobs on the grill,-marinate steak and veggies in teriyake for a couple of hours(separate container for meat) good veggies are mushrooms, onion, bell peppers, cherry tomatoes, zucchini or yellow squash.
with some kind of good hearty bread from the deli (baguettes are nice) and a nice cheese. For dessert , keep it simple- Strawberrys and whipped cream, or anything dipped in chocolate. that could get interesting ;).
Just keep it simple, but thoughtful. The really important thing is that you make an effort, but remember the point is to focus on the two of you, which will be hard if you are worried about complicated recipes.

Steak asparagus and a ceasar salad. I'e learned the best trick to prepare asparagus is to put it in a ziplock bag and maybe season it w/ a bit of salt, pepper.. ..or whatever you want and shake it up evenly and pop it in the microwave for 1.5 mins or so ...that way it will be cooked but not too cooked so that it still crunchy and flavorful.

Gotta do spaghetti, frenchbread and salad. Make sure it's candle lit, and make a special area for dining, be creative. Keep it intimate and candle lit, with good music in the background. If you want to go all out and get her an I love you card, it's all good.
