Blondie dear, I am afraid that everyone else has beaten me to this answer but for the sake of heaven I will give my humble morsel. Torah twice commands that the kid should not be boiled in its mother's milk and as a result rabbinic midrash has taken this to be the restriction on meat and dairy being consumed together.
One might think this to be an odd command but it does prove to have some health benefits. For example meat and dairy digest in the human body a different speeds and meat and dairy together often cause wind and internal discomfort etc.
The practice of boiling a kid in milk was banned in ancient Israel because it was a cultic practice of many bronze age communities in Canaan.

in the bible, there is a commandment of "thou shalt not boil a kid in its mother's milk". this commandment extended to not consuming milk and meat at the same time. i've read two reasons for it. the first is that its connected to idolatrous practices, and the second is that according to kabbalah, milk symbolizes life and meat symbolizes death, and never the two shall mix, or so to speak.
